Prairie Ale is our classic saison. We brew this beer with pilsner malt, wheat malt, flaked wheat, and cane sugar. A healthy dose of saaz hops are used to add a spicy element to the beer. Prairie Ale is fermented with a mix of ale yeast, wine yeast, and brettanomyces. Notes of black pepper and pineapple can be found in this beer.

Bomber into glass..pours mostly clear at first...2nd pour is very haze light orange...metallic soapy aroma and taste...not my usual style..but its helping me get drunk! Yay

Nice citrus odor. Clean and crisp on the palate. Can definitely tell it was fermented with brettanomyces. Delightful saison.

A murky pale apricot color with a fluffy white head and good lacing. Aroma of bubble gum and pineapple with some white pepper and mild funk. Taste follows nose with pineapple and mild bubble gum with coriander and clove. Some wheat flavor and hints of the brettanomyces with hints of funkiness. Aftertaste of white pepper spiciness. Finishes dry with lingering spiciness. Mouthfeel is very creamy with a medium full body and moderate carbonation. Fantastic beer that is full of flavor and very drinkable. Really like the balance of all the flavors.

S: A ton of lemons, fruity esters, brett, more yeast, and a ton of spices. P: Golden haze with a two finger head that doesnt last long. T: Lemony, some earthy brett, spices towards the back and a metallic flavor towards the end. M: Highly carbonated but not overpowering with a light/medium body. O: Highly drinkable and good but nothing especial here.

Pours cloudy golden orange with a creamy white head. Aroma and flavor both bring the divine sweet Bretty yeast mixed with the other two yeasts that dominate the flavor. The Belgian candi sugar shines through in a smooth way helping enhance the yeast. The Saaz hops are tame rounding out everything so well on a perfectly balanced body.

Draft pour at the Sybarite Pig in Boca Raton, Fl. Snifter. Pours a hazy yellow with a one finger white head. Head gone in about 120 seconds but solid lacing. Aroma of brett, farm funk, citrus, white pepper and bread. The taste is similar with the brett and wine yeasts playing well with the pilsner malts. Well balanced, slightly dry finish. Not sour, but that good farmhouse saison. Light body, solid carbonation. Crisp and refreshing. I could drink this all day.
