UPDATED: MAR 11, 2015 Bottle: Thanks, Kevin! Pretty volatile, light amber and clear yellow body with a huge and super foamy white head. Aroma is floral, earthy, and grassy with copious amounts of saison yeast, mild must, and a touch of spruce. Light fruity and pine character. Taste is pretty much the same, grassy and lightly herbal with a bit of spruce and a touch of spice, clove and orange zest. Some bubblegummy yeast is apparent as well. Crisp, bready malt in the finish with more notes of wet grass. Decent, but perhaps a little too spicy/herbal for me to love it.
Clear dark golden color with lasting eggshell white head. Light phenolic/peppery aromas with dry herbs, berry fruits, light mint, dust. Medium body with average carbonation. On tap at Saraveza, pours a hazy dull copper with a small white head. Nose brings out spruce, fruity esters and farmhouse notes. Flavour reveals loads of fruity esters, followed by woody spruce and yeast. Really well-constructed, with the spruce situated perfectly. Great one. A very careful pour into my large Tripel Karmeliet tulip still ends up being a massive foam over five-fingers of light tan colored froth in the glass, plus lots more I have to siphon off. The beer is a ruddy amber color that shows a clear, bright, orange-tinged, rich gold hue when held up to the light. The beer has a grassy, floral character to it up front, and this is backed by a musty, almost woody peppery note in the finish. The middle of the nose has a bright citrus character to it that is definitely reminiscent of young spruce tips. There is a definite green woodiness to the nose, much of which comes from the spruce. Light citrus notes up front are backed by a spicy, herbal, maybe even slightly medicinal note in the finish. There is a definite light phenolic character to the finish, makes me think that there might be a touch of Brettanomyces character here; though it could just be the musty, spicy, woody character that is so prominent in this beer.. There is a soft malt character here that contributes a touch of English biscuit, perhaps a touch of whole grain cracker, and some light grassy grain notes. Initially this beer is quite frothy and excessively carbonated, though it seems to lose the carbonation quite quickly; the body is quite light, there is just a touch of texture to the beer that lingers on the palate in the finish.
The beer is definitely tasty, but it seems to be a bit unbalanced somehow; it is perhaps a bit to medicinal, or phenolic, or sharp in the finish, and it clashes with the citrus, fermentation, and light malt character just a bit too much to be perfectly balancing.

Hazed golden with a fleeting soda pop white foam. Smells of belgian yeast, grain, clay, some peach meat, peppercorn, spruce, a touch of mint. Flavor is sweet breads, some mealy porky like flavors, some bitterness (probably from the tips), not too overdone, a ton of delicate flavors. I really like the flavors here. Full bodied with a velvety carb and a semi dry finish. A really nice beer, wish this wasn’t one of those "once a year, we’re so local and crafty and shit" beers. A real treat.

Bottle:   Orangish straw, thick and hazy, moderate to large frothy white head, decent lacing.   Very soft herbal and shrubby nose.   Has a slight floral soapy aspect.   Very rustic on the tongue, wheaty, dull floral notes, shrubby, with a touch of fragrant soap.   Moderate to full body and mouthfeel.   Strong mountain shrub on the finish, wheaty, dried grasses, with minor fragrant soap.   My least favorite of all of the three I have had so far, but still its clean, great mouthfeel, and comes across as very rustic or old world like.   I just wished they made these with much more bright floral notes, then most of them would be homeruns! Bottle: The aroma consists of citrus, bubblegum, spruce, and light apple. It pours a mostly transparent golden-orange with a yellow-tinged off-white head that eventually fades to a thin film outlined by a thicker ring. The flavor starts with moderate apple and light citrus. The finish has light honey, floral notes, spice, hints of lemon, and faint spruce. it’s medium bodied with mild carbonation.
Tasted on 7/16/13 from a capped 750mL bottle purchased at Belmont Station. Pours murky dark orange with a thick white head that slowly recedes to average lace. The nose is sweetish bread malt with a bit of spicy Belgian yeast and a bit of a spicy malt character as well, and just a bit of nicely bitter hoppiness as well. The flavor is pretty much the same, with the spicy malt character a bit stronger than on the nose, with plenty of spicy yeast, and a nice bitter resin hops finish. The body is fairly full with average, stinging carbonation, and a very long spicy malt and hops, and nicely bitter finish.
