The name Altbier, or “old beer,” refers to the pre-lager brewing method of using warm, top-fermenting yeast. As time went on, the Alt yeast eventually adjusted to lower temperatures, and brewers would store – or lager – the beer after fermentation, which they discovered yielded a cleaner, crisper beer. This process soon became the standard for other top-fermented beer styles. A Düsseldorf specialty, Altbier is a moderately dark German-style brown ale that exhibits the dryness of a lager but also boasts pleasant fruity notes. The extended conditioning mellows the fruity characteristics to produce an exceptionally smooth, delicate, and balanced beer.
