Formerly brewed at Birrificio Sottobisio
This is an oak barrel aged beer obtained starting from the same wort of our Barley and same alcohol content (10% vol). We jealousy keep it in the french wood barrique for 18 months (the 2015 version was aged for 6 months). These barriques are kindly supplied by Enrico Trapletti’s cellars after they have kept twice his top wine brand Culdree ( http://www.ticivino.ch/vini-e-degustazioni/rossi/207-culdree.html ). The beer looks ruby color, slightly veiled, with a natural carbonation slowly developed in the bottle. Some of the found flavors: plum, vinous, green apple (reducing over aging), chocolate, black cherries, wild strawberry in spirit, crema catalana (or vanilla). On the palate the lightweight and well-balanced sourness, allows us to distinguish the notes of wood, with the tannins present but never dominant but stronger than 2015 edition, and, again, hints of prunes, hazelnut and nougat all in a creamy and low carbonation frame. Warmly alcohol presence related to the long barrel aging. Beer is supposed to be served at 15 °C in a tulip glass, perfect to be sip after dinner in front of a roaring fire. A meditation beer!
