Belgian Sour Persimmon Ale. A brainstorm with the brewer’s of New Belgium. Brewed with Organic Pale, C-60 and Munich malts (with a touch of black), bittered with Palisade and finished with UK Fuggles. Wort soured with Lactobacillus Amylovorous and fermented entirely with Brettanomyces Lambicus. Made with curry leaves in the boil and 80# pureed persimmons in the fermenter. Starting gravity 14.6 Plato (1.060), alcohol 4.8% by weight, 6.2% by volume.
