COMMERCIAL DESCRIPTION
Our fourth wild ale is our first with a fruit component. Benedictum was inspired by the brown ales of Flanders. The primary fermentation was accomplished by our house ale yeast. The beer was then racked to barrels and inoculated with a mixed culture of wild yeast and bacteria to finish the job. Toffee notes are balanced by fruitiness and a pronounced acidity. Tart cherries add a further layer of complexity to this very drinkable sour ale.

On draft at Pinthouse Pizza. Pours dark reddish brown with a tight tan head. Cherries, molasses, currants, slight oak flavor, medium sourness, good carbonation, creamy mouthfeel. This beer reminds me a lot of Russian River Consecration without the wine characteristic.

Dark amber, fizzy beige head. Sweet yeasty aroma, cherry and notes of spearmint. Citrus on the tongue with some spice as the sour takes hold. A bit boozy towards the finish.

Hazy deep chestnut Amber with a thin white head. Lovely nose with citrus zest and tart funky tones with lovely toffee nutty malts, and a lovely tart sour yeast. Lovely flavor featuring some dark malts, big lacto sour tones, zesty grapefruit flesh, citrus zest, and a little leafy hop tone, finishing tart and funky and delightful.

GABF 2014. Muddled reddish brown. Nice cherry funk nose, bit of volatile acidity. Quite tart, with definite balsamic notes, along with red fruit, and funk. Vinegar notes kept in check. Very good, but couldn’t drink a lot of this.

Dark reddish-brown with a frothy lacy tan head. Very sour and fruity with dry woodiness. Dry, medium body. Aroma of sour cherries, Chardonnay, wood, raspberries. Top notch sour.

Growler courtesy of thirdeye11. Reddish brown body with an off-white head. Smells great - cherry and other pitted fruits, wood, toffee, vanilla. Wonderfully tart and fruity. Great sour from Real Ale.
