COMMERCIAL DESCRIPTION
Mysterium Verum. Imperium is the second release in our new line of barrel refermented wild ales, though it is the first to feature wild yeast that is indigenous to the Hill Country. Our Lost Gold IPA was aged in American oak barrels for 6 months after being inoculated with a strain of wild yeast that was harvested from the skies surrounding the brewery. While the aroma hints at a subtle tartness, the flavor centers around a dry, funky, barnyard character that matches perfectly with the elevated hop level of this IPA. OG: 15˚P IBU: 63 ABV: 6.6%

Hazy copper with a thick head. Very sour aroma. Great sour taste with a little bit of sweetness. Exceptionally smooth palate and comfortable wet finish. Badass.

Far from transparent orange-amber with a whitish head. Lots of filmy lacing. Strong aroma of flowers, citrus, and candy. Tastes moderately sour and pretty well balanced. Medium bodied; slightly dry. Very nice. The flavors arenít as bold as some sour/wilds, but this one is quite refreshing and easy drinking.

Pretty good balance of funk versus hops. Itís definintely more IPA than "sour beer", but it is different. Should be fairly approachable for most, but it just doesnít seem very interesting. Maybe the effort put into production will pay off in future releases. Or maybe this should be bottle conditioned and cellar aged for awhile?

(growler) clear, rich amber, wispy white bubbles. Nose of pineapple, Brett, light hops, fairly complex, funky. Taste of pineapple, Brett, bit horse blanket, dry, caramel, interesting.
