To get a subtle smokiness we brew with Scottish peated whisky malt, English pale and roasted malts and boil only whole leaf goldings hops. Querkus is then patiently cold matured over pieces of old French oak barrels. The flavours from the toasted wood slowly seep into the beer; bottling only when we think it is right.

[3729-20110513] 1pt.9floz bottle. Smoky aroma with fruity dates and darkness and band-aid. Slightly hazy, dark dark red body with a medium-lasting foamy light tan head. More toasted smoky used coffee grains in the flavour. Medium-full body. Interesting and flavourful, good. (7/3/7/3/14) 3.4

Chiswick (159) - Greater London, ENGLAND - JUN 22, 2011
deep darkish brown liquid, pours a thin tanned/white head depending on the pouring. overall appearance is solid and balanced, a bit like coca cola. aromascape is pleasantly wide with chocolate, i hint of caramel and ginger, hay, oatmeal, roasted scent, light coffee, leafy, wood, seaweed, a drop of licorice and smoke. the taste is subtle, kind and balanced. soft sweetness compliments the low bitterness very well. very low sourness keeps the taste going. a drop of salt. the body is quite light but the slightly oily and slick texture bring out the smoky character which balances this out to a nice overall feel. carbonation is lively and could do with less, but nonetheless works. again, a very balanced beer from ridgeway. this could be like the cousin of Kelpie, except with a bit more smokiness and wood.

blankboy (7833) - Toronto, Ontario, CANADA - JUN 1, 2011
Bottle [500ml] shared with HogTownHarry, jerc & mabel -- c/o HogTownHarry. Pours a very deep ruby, looks almost black, with an average size diminishing bubbly tan head. Very nice aroma of roasted malt, smoke, milk chocolate and light coffee. Flavour of roasted malt, coffee, smoke and dry roasty finish. Medium bodied, slightly creamy mouthfeel. Surprisingly, I really liked this!

Pours deep mahogany into an English pint. Off-white micro head with excellent retention recedes leaving sheet lacing. Slightly smoked chocolate milk aromas. Dry with oaky chocolate milk upfront turning to smoke in the lasting finish.

phaleslu (10750) - Cincinnati, Ohio, USA - MAY 16, 2011
Sample from a bottle poured at TWCP Beerfest 2011. Pours a cloudy, dark brown color with a small khaki head. Aroma of peaty, porky smoke, with notes of brown sugar, milk chocolate, and earth. Flavor is a little better, with smoke, sweet malts, oak, sugar, and earth. Medium-bodied, with moderate carbonation and a mildly smoky, earthy mouthfeel. Pretty one-dimensional smoked beer.

jercraigs (10923) - Toronto, Ontario, CANADA - MAY 15, 2011
2011-05-13. Crisp dark brown body with a small froth tan head. 3+ Interesting aroma, modest smoke character over a rich malt base. Flavour has a nice malt base, the smoke is not overly strong but has a long lasting presence. 6+ Average plus bodied palate. Pretty decent, well made beer, but the smoke is just enough to put me off it. Not to my taste. Bottle shared by HogTownHarry

Bottle. Pours black. Off white head. Nose/taste of smoke, roast chocolate malt, barley and vanilla. Lightish body.

Leighton (22555) - London, Greater London, ENGLAND - MAY 2, 2011
Bottle at home. Clearish brown pour with a strong, beige head. Some dark, cocoa malts kick up in the nose, a bit of moss and roast. Lightly sweet with dry, woody roast, faint cocoa. Light in body with average carbonation. Weak smoke finish, some mild grass and citrus bitters, light cocoa. Decent overall.

nuplastikk (6477) - Madison, Wisconsin, USA - APR 4, 2011
500ml bottle. Amber hued deep brown. Thin beige head. Some mild smoke in the very sweet, chocolate tinged aroma. Medium bodied, a little watery in my opinion. The smoke is delicate and just adds balance to the beer. I don’t get much oak at all, maybe a touch of vanilla. Somewhat nutty. Quite enjoyable, but could use a little more depth.
