To get a subtle smokiness we brew with Scottish peated whisky malt, English pale and roasted malts and boil only whole leaf goldings hops. Querkus is then patiently cold matured over pieces of old French oak barrels. The flavours from the toasted wood slowly seep into the beer; bottling only when we think it is right.

bb - 14/02/15. Pours a dark brown with red edge. Aroma is choc, coffee, a spot of whisky, dark fruit. Light to medium body, a bit thin. It’s got a nice peaty, smokey thing alongside some coca cola, rum, coffee and candy choc. OK.

50cl bottle from the Sainsbury’s Beer Hunt 2013 range. Very dark brown colour with a thick beige head. Very malty aroma. Not sure how much smoke there is. Some milk chocolate. It’s an ok choccy malty, slightly grainy beer. The smoke comes through on the finish. Some dryness on the finish. Some woodiness. OK.

330 ml bottle of the 5.8% version bought at Sainsburys. Pours almost black with a tan head. Smoke vanilla and licquorice aromas. Similar flavours with some mocha. Velvety texture. Really nice beer.

330ml bottle at 5.8%. Pours very dark brown with a medium head. Aroma is bitter coffee, leather and a touch of ham. Taste has leather and coffee to start with a bitter ham on the finish.

Smells like winter time. Pours dark, thin brown, with a dissipating whitish head. Aroma of molasses and roasted malt. Tastes like Roasted malt with a milky finish. A bit sweet.

One of my all time favourites. Strong but extremely pleasant smoked aroma. Layers of flavour that develop with each stage of the tasting and a fantastic after-taste. You can definitely taste the care that was taken maturing the smoky flavours.

I generally prefer my smoke a bit more intense but the lighter approach works really well here.
