A bottle from Jason’s, drunk at home. Aroma: sweet and fruity, figs. Appearance: opaque, oxtail soup, minimal head. Palate: full-bodied and creamy, soft carbonation. Long, sweet, very complex finish. Decent pour, surprisingly tame for a Trappist Ale; the color’s a lovely hazed golden brown and the head’s persistent, but the lacing has gone missing. Aroma gives up waves up Belgian yeast, raisins, apples, and overripe peach and a hint of booziness. Taste develops nicely as it warms, growing more and more complex as the dark fruit notes mesh with a caramel-tea sweetness backed by a bitter minerality. Plum and red apple and black cherry underneath it all, followed by a earthy-doughy finish offset by the slightest floral hop bitterness. Solid sparkly Belgian mouthfeel. Not my favorite Trappist but a solid beer nonetheless.
