COMMERCIAL DESCRIPTION
This beer, the oldest of the three Rochefort Trappist beers, has the reddish colour of autumn leaves, a soft body and an earthy, herbal palate (a hint of Darjeeling tea), which develops into a deep fruitiness.

Pours a cola tainted amber with a pleasant just off white head. Brussels lace clings throughout. Aroma is pleasant: caramel, cereal, nuts, dough, very malty. Taste is intriguing with sour notes rising to the top. Clean mouth feel with an astringent bitter finish. Solid.

A bottle from Jasons, drunk at home. Aroma: sweet and fruity, figs. Appearance: opaque, oxtail soup, minimal head. Palate: full-bodied and creamy, soft carbonation. Long, sweet, very complex finish. Taste: heavily sweet but not overpoweringly so, very well-balanced beer. Surprisingly warming for 7.5%, a very satisfying drink.

Bottle. It poured a dark amber color with an off-white head. The aroma was of caramel, bread and malts. The taste was similar to the aroma with more caramel, bread, malts and dark fruits. Nice.

Decent pour, surprisingly tame for a Trappist Ale; the colors a lovely hazed golden brown and the heads persistent, but the lacing has gone missing. Aroma gives up waves up Belgian yeast, raisins, apples, and overripe peach and a hint of booziness. Taste develops nicely as it warms, growing more and more complex as the dark fruit notes mesh with a caramel-tea sweetness backed by a bitter minerality. Plum and red apple and black cherry underneath it all, followed by a earthy-doughy finish offset by the slightest floral hop bitterness. Solid sparkly Belgian mouthfeel. Not my favorite Trappist but a solid beer nonetheless.

Bottle from Elysium. Aroma: Dried fruit, peach, herbal notes, caramel. Appearance: Dark brown body, high head. Taste: Caramel and dried fruit, peach, citrus, tea and lemongrass-like herbal notes, a bit of acetone. Palate: Sweet finish, high carbonation, medium body.

Brown color. Lots of carbonation. Aromas of lemongrass, plum, spicines. Sweet, caramel, rich, light alcohol, grilled banana, very nice and fruity. Long dried fruit finish. Very good stuff.

Red-brownish pour. Rich caramel, herbal and earthy notes, even a bit grassy. Has that classic Belgium taste. Go Monk!
