Bottle. The pour was a murky medium chestnut brown with an average sized (1-2 finger) light tan head that quickly diminished to a thin cap, which in turn created some excellent sheets of lacing.
The aroma was of a dark bread malt and a sweet Belgian yeast with notes of toffee, a plethora of dark fruit (cherries, plums raisons and figs) and a mild alcohol tinge.
The taste was a mild malty sweet with a good toffee note early on, then becoming a bit yeasty with a big note of dark fruit and a pronounced alcohol finish. The flavor however was short lived fading quite quickly proceeding the swallow, with the fruity yeasty alcohol taste disappearing in what seemed like a matter if seconds.
Mouthfeel was somewhere in the middle of light and medium in body with a slightly dry and a bit watery texture and a soft to medium carbonation.
Overall this is a very well put together Belgian Ale, although this one is a tad lighter than the Trappistes 8 & 10 from this brewer. Now don’t get me wrong, I truly think they are all exceptional brews...
The last of the three Rochefort beers for me to try but the first to have in my Trappistes Rochefort glass. The 11.2 oz. bottle came from a Ft. Worth area HEB. Going into the trappist glass it delivers a light amber body topped by an healthy egg-brown head. Taking a sniff of it I find yellow raisin, yeast and and a ribbon candy sweetness. A taste gives me an Orval-Duvel feedback, grain, yeast, apricot with some spice/herb in the background. Color is amber and haze with a small white head. Aroma is sweet and caramel with a taste of butterscotch. Aftertaste is sweet and well balanced and a nice tasteful beer

Bottle (7,5%) tasted during birthday beer event. Color is hazy and ruby-like. Small head. Aroma is fruit, apricot, toffee. Taste is well balanced between sweet and dry. Bottle @Strawberry Thief, Bristol. Huge head, dark golden colour, nice lacing, lightly cloudy. Aroma: fruits, berries, raisins, roasted malts. Lightly bitter with lightly sweet aftertaste. Full body, lively, long finish. Very good.

Mild, slightly sweet aroma of dried fruit and malt. Pours dark amber/ruby with a large head. In taste not entirely sweet, but not dry either, at first malty with caramel, followed by breadinesss & raisins and then some spiciness, ends with mild earthy bitterness. Ale Belga trapense. Mucha espuma blanca que va desapareciendo. Color: ámbar oscuro. Gusto dulce sin exagerar con un ligerísimo toque amargo. Malta, levadura, pan, caramelo, fruta seca. Cuerpo medio. Se bebe muy bien para ser una cerveza de abadía. El sabor es excelente. No se nota el alcohol. No tiene la complejidad y el cuerpo de la chimay y es menos dulce que la trappe o la grimbergen. Hazy dark amber color with off-white head. Aroma has fruity yeast esters, dark toasted malts and some brown sugar. Quite classic belgian ale nose. Taste starts balanced with some tosated malt character, follows with slightly acrid yeast notes and finishes with a light earthy bitterness. Medium body and carbonation.
