The lower gravity cousin to Rochefort 10. Nicknamed "Spéciale" (’The Special’), this beer is the most recent production. The Rochefort 8 has a more tawny colour and a more pronounced aroma, with an even richer fruitiness (a slight undertone of fig?) and a little more spiced dryness, like that of a cake, which gives a balanced finish to the final notes.

Beer nirvana. Bottle to chalice. Pours dark brown, opaque with a nice tan head. Aroma is as complex as it gets, bread, dark pitted fruit, plums, figs, etc. with noticeable alcohol. Great creamy mouthfeel. Very complex with a fantastic finish.

Bottle - Darkish with red tinge. Large initial head dissipates to thin. Strong aroma of berries. Strong alcoholic tasting - too much for my taste - ok mouthfeel.

33cl bottle, bought Oct 2016. Dark chestnut brown colour with a fizzy off-white head, gradually dissipating. Aroma is malty, sweet, dried fruits, light spices. Taste is the same, rich, sweet and fruity, fig, raisin, lightly spiced, alcohol more noticeable here than in 6. Medium bodied, prickly carbonation. Excellent.

Bière en bouteille de 33 cl. Aujourd'hui c'est de l'une de mes bières favorites que nous allons parler! La Rochefort est une bière produite par une des onze abbayes trappistes existant au monde. Elle provient de l'Abbaye St Rémy de Rochefort chez nos amis les belges. Le "8" dans le nom ne signifie pas que la bière titre à 8°, il s'agit d'une ancienne mesure de l'alcool qui n'a plus cours et qui exprime le centième de la gravité du moût avant fermentation, personnellement je n'y comprends rien mais ça ne m'a pas empêché d'apprécier cette bière! Pour finir avec les anecdotes, l'abbaye de Rochefort possède sa propre souche de levure. Passons maintenant à la dégustation! La Rochefort 8 a une jolie teinte acajou à rouge rubis et une tête haute et mousseuse de couleur moka avec une bonne carbonatation. L'arôme est complexe, à la fois épicé, malté, fruité, amer et sec, avec quelques nuances de levure, ainsi que des notes légèrement sucrées de fruits secs, et enfin des notes épicées. Il y a également un côté vineux et alcooleux. La bouche confirme le nez. C'est une bière équilibrée, ronde, pas trop sucrée, toute en finesse et très facile à boire. On sent moins l'alcool que le nez aurait pu le laisser présager. C'est probablement une des meilleures bières que je connaisse. Quand on se sert une trappiste on s'attend à du lourd, et là franchement il n'y a pas de quoi être déçu, la Rochefort tient ses promesses. Avec cette bière, il est impossible de ne pas tomber amoureux dès la première gorgée, et on surprend à se dire qu'elle a disparu trop vite et qu'on s'en servirait bien une autre!

This is one of those legendary beers, so I was very excited to try this. It pours an amazingly large and frothy head. I didn't use the right glass for this, but it is still a beautiful looking beer. By far the most carbonation I've ever seen, with a beautiful dark golden brownish hue that is typical of this type of ale. Smells of caramel, dark fruits, toffee, and alcohol. For 9.2 ABV, this beer does not smell very alcohol forward, but it is definitely in the aroma. The aroma is outstanding, it's very strong but not overwhelming at all. The same could be said about the taste. It is incredibly rich, but dry with flavours of dark fruits and caramel. A little bit of spices too. The finish is also very dry, but is rather sweet. The alcohol notes come through there a little bit, but it doesn't burn or anything. It's very balanced, expertly so, and it very easy drinking. This is probably the best beer I've ever had. It absolutely lives up to the hype, and I am beyond excited to try the 10 out.

Aroma of raisin, bubblegum, lightly banana, alcohol, caramel. Taste of caramel, raisin, bubblegum. Medium sweetness, medium body, sticky, fizzy. Nothing amazing in this beer.

UPDATED: JAN 31, 2018 Pours dark with a very thin head. Toffee, dark chocolate, and banana aromas. Paired nicely with beef stew. Solid beer, but not the best I’ve had in this style.

Pours a dark caramel iced tea brown with a thin off white head. Lots of carbonation and light sediment. Semi-sweet toffee aroma with some Belgian spices. Crisp sweet taste with lots of soft carbonation and some light spices. Taste has a little too much coriander and herbal flavors for my liking. Not bad but not my style.
