Walleye Wheat changes throughout the year from a Hefe to a Wit to a Dunkelweizen. This unfiltered wheat is light-bodied and smooth with a mild, hoppy nose. They use a special Canadian malt called honey malt to give our wheat its unique flavor.

Part of a sampler at the brewpub. Cloudy, colloidal umber, persistent flat white cap. Estery wheaty aroma with definite campfire notes. Odd. Wheaty palate, no smoke in the flavour, some banana, minimal spice.

Draught at the brewpub. Opaque gold with a lasting white head that leaves nice lacing. Lots of banana, and some supporting clove with a sweet malty touch and some grainy wheat in the aroma. Zero bubblegum despite being quite fruity. I like that a lot. Felt like it should have been sweeter than it was but this was more by way of a thick, milkshake-like body than sweeter, simpler sugars. Really full bodied actually, with a great smooth texture. Substantial, yet quite drinkable.

On tap at the Brewpub in Chicago in March 2008. Hazy yellow with a small white head. Citrus, yeast and banana in the aroma and flavor. Soft carbonation. Quite smooth and drinkable.

[Tap] Pours a nearly clear golden color with a small amount of foamy head. Aroma of wheat malt and some grass. Some clove, bubblegum and sweet malts in the flavor. The overall flavor profile was quite thin and muted. Could have been better if brewed with more ingredients.

[2498-20090926] Tap. Mild citrus yeast aroma has light banana clove. Hazy, light orange brown body with a medium-lasting creamy white head. Tons of banana clove and fruity yeast in the flavour. Medium body is mellow. Quite nice, drinkable, good fruitiness.

Draft sample at RB - Chicago under a listing of Rotating Wheat-Hefeweizen. Poured hazy yellow color with an average frothy off-white head that mostly diminished with good lacing. Moderate wheat, banana and clove aroma. Medium body with smooth texture and soft carbonation. Medium smooth sweet flavor with a medium sweet finish of moderate duration. This is another good session beer.

2009-09-26. Hazy pastel gold, small creamy white head. 3+ Mild aroma is estery, banana. 6+ Flavour is similar, banana and esters, sweet wheaty malt core, kiss of acetone or similar detracts. Average palate is smooth. Decent but lacks depth. Simple but mostly enjoyable. On tap at Rock Bottom Chicago

Hazy orange pour. The nose is loaded with the typical banana/clove aroma over a fairly fresh wheaty nose. There is also a little bit of bubble gum flavour as well as some apple. There is an odd note of DMS that I could do without. Wheaty with a little bit of orange on the back.

Tap at the Brewpub: Cloudy murky/muddy deep golden with a thin white film of head. Tons of typical hefe yeast phenols dominate the aroma- sweet rotted banana and only a touch of clove. Creamy on the palate. Very yeasty flavor, much like the aroma- ripe banana, some dusty phenolics as well as a toasted clove note. A standard/dirty Hefeweizen.
