This pours a unique brown that has a dark to light gradient from bottom to top and a medium caramel head. It has an aroma of honey, apple, and faint hops. This is a very tasty beer. A medium sweet and bitter taste that is a little more on the bitter side. The palate is light to medium body with a crisp texture and very lively carbonation from pour to finish. It also has a somewhat heavy bitter finish. This is a magnificent brew that I will be more than willing to pay $14.99 for a 750ml bottle if I have the chance.

Flavor of dark fruit with a funky barnyard finish combined with a bit of bourbon.

Poured from a corked and caged 750 ml bottle at the source. Pours a nice translucent brown amber with a creamy beige head of foam. The aroma has notes of cherries and dark fruits, maybe a light chocolate presence. The taste is sweet and mildly fruity. My favorite of the rockmill beers thus far. 750 ml bottle into chalice, bottled on 2/25/2012. Pours very hazy reddish brown color with a nice 1-2 finger fairly dense light khaki head with great retention, that reduces to a nice cap that lingers. Some good spotty lacing on the glass, wit ha fair amount of carbonation streaming up. Aromas of cherry, raisin, pear, apple, molasses, pepper, clove, herbal, earth, dark candi sugar, toast, biscuit, and yeast spices. Very nice and well balanced aromas with good strength and complexity. Taste of big raisin, pear, apple, molasses, dark candi sugar, pepper, clove, herbal, earth, toast, and yeast spices. Lightly tart yeast esters on the finish; with lingering notes of light fruits, molasses, herbal, dark candi sugar, pepper, clove, earth, toast, and yeast spices on the finish for a good bit. Great balance of flavors with good complexity, and no cloying sweetness. Medium carbonation and body; with a fairly slick and slightly prickly mouthfeel that is nice. Alcohol is very well hidden with only a slight warming noticed after this finish. Overall this is an excellent dubbel. Great flavor complexity and balance; and very smooth to sip on. Very well done and highly enjoyable.

UPDATED: OCT 27, 2016 750 ml bottle. Hazy ruby color with a khaki head. Light lacing. Aroma is alcohol, cherries, cake. Raspberries, liquored fruit cake, caramel, vanilla, plums. Dark syrupy malts, medium body. Slightly sticky. 2nd review after more than 1 year aging. Appearance is a bit darker, hazy burnt orange with a khaki head. Aromas of cherries, raspberries, and other candied fruits, yeast. Slightly sour, some alcohol, fall leaves, and dried apricots. Other flavors match the aroma. 750 bottle purchased on recommendation at Hi-Pace liquor store, Columbus OH. I was looking for some brews unavailable to me in IL and the phenomenal beer guy at this Quikee-Mart looking store pointed me in this direction. Wow was he spot-on wi this recommendation. This Dubbel was extremely enjoyable. Pours hazy, deep brown with some nice head. (Is there any other kind?).
Malty, roasted with the perfect amount of yeasty spice to it. Not too overblown with alcohol, but a really nice presence. Every sip was a well-balanced present for the senses. Finish is long-lasting and smooooth...

Sample at Hills Market during the Brewed Awakening Book Signing and Tasting on 02/05/2012. The beer is a slightly hazy dark brown color with a medium light beige head that dissipates slowly to a film. Partial rings of lacing on the glass. Aroma of dark malts, fruit and yeast. Medium body with a sweet fruity character and flavors of caramel malt, yeast and a bit of alcohol. The finish is malty with a toasty, fruity aftertaste. Good beer overall.
