COMMERCIAL DESCRIPTION
Each time we make this ale we pick a different single variety of hops and use them exclusively in the brew. The malt bill stays fairly consistent from batch to batch so as to allow the distinctive hop flavors to come through. Here are just a few of the hops used in the past: Simcoe, Vanguard, Sterling, YCR-004, Amarillo, Azzaca, Idaho 7 (NJ7), Satus, Santium, Tomahawk, and Columbus. Available on draft seasonally.O.G.: 1.060;50 BU’S.

ineedbeer (2257) - Oakland, California, USA - MAY 16, 2013
100% Cascade Cross Aroma is mostly hops with a nice grapefruit citrus and light pine note. There is a malt backbone present though with some sweet bread and cracker notes. Pours a cloudy golden orange with a small white head that perseveres as a thin film on top and on the edges. Good lacing with small legs. Flavor is rather hop forward but it does have balanced cracker and bread character to balance the hops. The hop character is grapefruit and pineapple with some pine resin to balance out the fruit. The bitterness is fairly moderate which really allows the malt to shoe through in the finish in a bready way. Mouthfeel is medium to medium light bodied with medium carbonation. Low astringency and low alcohol warmth. Overall a good beer and definitely not retired, but its not their best. The balance is nice, but the finish to this hop is a bit lacking and has a slightly odd grassy note.

On tap at the brewery in Santa Rosa, pours a clear light golden color with a small head. Nose is fresh ripe peaches, with some tropical fruit as well. Taste is sweet with ripened fruit, pleasant and delicious . Finish is sweet and ends on the same fruity notes. Great IPA. Quaff Score 9 / 10

(F.O. in Santa Monica) Orange-gold with some head. Citrusy hops aroma. Nice citrus hops flavor, not over the top (but more than an English IPA).

Clear orangey amber hue, good head formation. Fruity aroma, grapefruit an dpineapple. Light malt on the palate, spicy, grapefruit bitterness and mild pineapple juice. Mildly biscuity in the aftertaste.

Enniskillen (2061) - Bakersfield, California, USA - APR 13, 2009
Nice amber gold with a nice white head. Aroma is an initial pine hoppiness, followed by fruit, and a fresh hop like accent. Taste is a straight forward hoppiness with little depth to it, light alcohol, some honey like sweetness.

On tap at Russian River brewery in Santa Rosa. Pours golden with a white head and sweet, fruit, hoppy aroma. Taste is of tropical fruits up front, with hops, citrus, caramel, and toasty notes leading to a bitter, dry finish. Nice IPA

Part of a sampler at the brewery. this one pours a super light golden with a small white ring of head. Very sweet citrus aroma, raw vegetal hops, grass, interesting. Flavor follows with lots of pine and vegetal hop bitterness, slightly dirty finish, not much sign of citrus here but that's ok. a very light bodied pale ale and medium carbonation. Overall the finish takes away from this, as it is a touch unpleasant. Only OK.

Single hop cascade. Pours yellow with white head. Taste is some pineapple and hop bitterness finished very sweet.

Pours medium amber with a two finger white head. Full nose of citrus and floral hops with a touch of malt sweetness. Same in the flavor. A bit of a grain husk, dry finish. Quite enjoyable and easy drinking.
