Bottle 75cl, a clear amber beer with good creamy head. Nose is grainy with yeast touch. Aroma is spicy on licorice and cinnamon, caramel and vanilla touch, sweet, cherry touch, grainy, good.

Pours clear bright mahogany into a trappist glass. Off-white head quickly recedes to nothing. Hot toasted caramel and roasted nut aromas. Slick and sweet from front to back with a lasting alcohol burn.

It’s brown bodied, slightly misty and light tanned head might look Christmas-y, the aroma immediately makes clear the intent of this brew: to be a lightly spiced yet very drinkable ale that many can enjoy. And although I’m not overly impressed with the light bready and nutty aroma - a bit too mellow for me - the palate brings forward a sweet bittersweet brew that combines caramel malts, cookie spices and surprisingly high drinkability. Certainly a well made beer, but probably the best part about it is how it does not try to mimic the well-known Belgian Christmas sippers or turns around and be nothing like it. Instead, this delicate yet rich tasting brew brings a well flavoured and enjoyable beer for those winter night that aren’t quite as cold as tv would like you to think it is. Suits me well. On tap. Clear light brown with a fizzy white head. Sweet malty, toast, caramel, and toffee aroma and taste with a malty finish and a lightly sticky medium bodied palate.

Sampled on 1/8/2010. This Biere de Garde pours a medium orange gold color from a 75cl swing-top bottle. Medium to small sized white foamy head. The aroma is fruity and sweet, with a touch of honey. A medium bodied Biere de Garde. The malts are caramel, fruity and sweet. The hops are earthy. Nice balance. Slightly sweet. A very drinkable, but not remarkable winter ale. Mouthfeel is full and round. Finish is clean and smooth. Aftertaste is slightly sweet

Bottle from Cave à Bulles. Hazy ruby red colour. Complex spicy nose followed by cinnamon and other spices as well as berry flavours. Well-balanced, hints of sourness. Very accomplished- the spices augment rather than distract.

Bottle RBWG 2010. Pours a nice medium amber with a low to mod carb and a medium to small head- lasting. Aroma is nutty, toasty and earth with some moderate caramel sweetness and light herbal phenolic yeastiness. Flavor is earth, toast, herbs light nuttiness, some honey sweetness and a good fresh doughiness and lightly burnt bread with good grassy bitter hop finish- nice.

0.75 l bottle. Amber color with fading head. Sweetish aroma with toffee, dark caramel, berries, vanilla, lemon, some tartness, some fruitiness and some musty notes of cellar. Sweetish caramelly, toffeish, musty and slightly metallic flavor with raisins and figs. A bit too sweet and full bodied, the biere de garde aromas and flavors are masked. Although mustiness is typical for biere de gardes, here the musty character is kind of dull.

Well, shucks. The French can make good beer. This 750 bottle from BevMo poured a slightly hazy amber with a small white head and light lacing. Nose of sweet caramel malts and cinnamon spices. Medium body and mouthfeel, with moderate carbonation. The flavor is slightly sweet and the spiciness is present. A very nice holiday brew.
