This beer pours exceptionally bubbly. I got ahead of myself and had to wait about 10 minutes for some of the head to subside to fill the glass properly. Very yellow in color with some cloudy yeasts evident. Very light, herbal and citrus nose. The flavors

Pours a hazy gold with a large foamy white head. Aroma is intensely fresh floral, fruity apple, honey.
Flavour is effervescent and light. crisp fruity flavour with a dry finish.

UPDATED: JUN 9, 2015 Green bottle, 2006 vintage sampled in the early morn of July 28, 2007. Big spicy, dry aroma; orange rind and nutmeg with coriander and some herbs, grass and wood and prominent notes of dust and cobwebs. Fills the room with its yeasty, floral bouquet. Faint honey and white pepper. Deep golden pour with a huge yeast-driven rocky white head, strong carbonation. Taste is dry, hugely yeasty, and mildly fruity. Apricot and faint berry bubblegum, floral and spicy and sweet. Lesser notes of tart and bitter. Crisp beginning, but overall feel is rather smooth with well-integrated alcohol but a twinge from the light acidity. Grassy and bready but both of those under the citrus. Rounded and complex, very dry. Really a ton going on here, but for all the individual notes, it’s a gentle blend with considerable subtlety. Quite refreshing. 375mL this time, cork marked 2014. Dark golden, clear and fluffy white cumulus foam. Nobly hoppy, lemon, dust, hay; dry and lightly tart, clean and attenuated, very faint mineral and stone, crisp and bubbly-fresh, subtle green apple. Love the subtle differentiation in the lemon character here, some nice lemon-vanilla meringue blending. Distinctive and just lovely as always.

Mild yeasty aroma mixed in with nice citrus notes. Light yellow/golden color, reminiscent of fine champagne. Very foamy white head. High carbonation.
