Brewmaster’s Collection Special Reserve
Saison Imperiale was created as a bolder more flavorful interpretation of the style. This is a deep amber colored beer with active carbonation forming a large tan head. The beer is fermented with two yeasts - the traditional ale yeast Sacchoromyces along with a light touch of the lambic-like Brettanomyces yeast, yielding a mild earthiness sometimes referred to as "farmhouse character." On the palate the yeasts and hops initially combine for fruity and spicy notes, followed by a semi-sweet caramel medium bodied depth and richness from the malt. A truly unique saison experience.

Bottled. Unclear dark golden with an off-white head. The aroma sweet with notes of yeast, over ripe fruits, malt, and spices. The flavor is sweet with notes of over ripe fruits, vegetables, lightly tart and dry finish. More like a imperial Biere de Garde, not that exciting.

Cloudy and amber. Funky nose with deep fruit (apple, pear) and some light clove. There’s also a mac & cheese note in the aroma, which makes no sense at all. Herbal, berryish (blueberry, boysenberry), funky light foot, alcohol, rich caramel, and spice...lots of stuff going on here. For all its complexity, though, it really is not very cohesive.

Bottle at Paul’s tasting. Pours reddish amber with off white head. Nose and taste of banana jolly rancher, candy fruit, baked bread and yeast. Medium body.

Aroma of malt, flowers, peach(?), spice. Ruby apricot color with tiny bubbles and a vigorous beige head that laced somewhat. Starts a bit brettomyces? Grass and herb are present. Some sweetness to go with the unusual tartness. Medium mouthfeel. Fairly dry once it settles down. Not getting much bitterness in the finish, just that unusual character. I can see why Matta suggested Wintergreen, but I don’t think that’s it. Interestingly different.

Bottle. Pours a dark orange with large frothy off white head that lasts awhile leaving sticky lacing along the glass. The aroma is an earthy yeast and citrus. Medium mouthfeel with a sweet fruit and light caramel malt with nice light spice finish. A good saison from De Proef.

750 ml bottle poured a clear deep reddish brown with beautiful creamy lasting amber head. Aromas of spices, banana, malt, teast and some herbal notes. Palate was light to medium bodied and smooth. Flavors of malt, spice, cheries, a hint of banana, yeast and a bit of herbs with a lingering lightly sweet finish. A complex and interesting Saison.

Corked bottle. Poured clear copper color with a large frothy brown head that was lasting with excellent lacing. Heavy nutty malt and fruit aroma. Medium to full body with a sticky finish. Medium blalanced flavor with a medium sweet finish of moderate duration. Solid complex drinkable beer.

Golden dark amber to brownish with a thin off white head. Big butterscotch aroma, rather cloying, with fruity esters, like banana. In mouth, a sweet lightly butterscotch malt, thin. A thin light body, with light caramel, light hops, overall, cloying. Enjoyed with the Mtl Crew Sept. 9, 2006.

(750ml bottle) Particulate-filled copper body topped by big beige head that diminishes fairly quickly, leaving nice lacing. Aroma is moderately sweet, bubblegum, some orange, cinnamon, raisin, some alcohol. Taste is moderately sweet, orange, some bubblegum, vanilla, herbal, light cinnamon. Dry alcohol finish. Medium-full body, somewhat sticky.

750 mL bottle purchased at Coaltrain Wine and Liquor. Pours a clear deep copper with a large sticky off-white head, excellent lacing, mostly lasting. Aroma is average malt (bread, caramel), heavy hops (flowers, grass), harsh yeast (solvent, medicine, antiseptic) with notes of band aids, bubble gum and honey. Medium bodied, spicy texture, lively carbonation and a bitter finish. Light sweetness, moderate acidity and bitterness; heavy medicinal flavor with notes of flowers and citrus hops.
