Bottle to English pint glass. Pours deep amber, two finger head with lots of lacing. Aroma of spruce, herbs. Taste is piney, dark fruits, herbal bitterness nicely balanced with sweet malts. Medium body, sticky, medium carbonation. Finishes earthy bitter with notes of herbs, pine, vanilla, and caramel. Interesting hop on its own. Very drinkable ale. Bottle from mix pack. Pours clear; amber in color. Aroma is floral, pine, caramel. Flavor is lemon-lime hops overwhelmed by cereal malts. Too thick and syrupy for my taste.

Bottled. Poured clear, medium golden with a short whitish head. The aroma picked up dank floral and citrus notes with a heavy sweet base.. aiight. The flavor found sweet honey and caramel notes at the core with floral notes, black pepper, and grapefruit bitterness around.. finished spicy and bitter. Bottle #2 of the 12-pack. Pours out a clear light amber color. Earthy-herbal aromas. Flavor of citrus and bitter herbal tea. I cannot remember trying anything with Mosaic before. My experience with the Deconstructed series has been extremely positive. While not all of the beers were as satisfying as I’d like, all of them has taught me something new. It turned out that Mosaic was an excellent single-hop IPA to go out on. It taught me a great deal about this variety and was tasty as well. Pouring a golden orange color and with a nice layer of suds, Mosaic gave me the intense fruity note I was expecting, but there was also a smell of grass, bready malt, and a musk that reminded me of marijuana resin. The flavor proved to be equally complex. At the front of the mouth, the smooth malts worked in tandem with the flavors of grapefruit rind, lemon zest, and orange peel to create a bitter/sweet balance. The brew’s grassy notes (both of them) dominated the finish with flavors of sweet earth. Finish is spectacular - crisp, clean, abrupt, refreshing. Mosaic gave me more than I expected. It was every bit as flavorful as I hoped but more complex than I’d imagined.
