She saw multiple yeast additions including Brettanomyces and further bottle aging. Drink now or cellar properly. Saison Bernice will endure. The beer in this bottle is alive. So is the yeast. Grow it, keep it, use it. We encourage you to brew your own.

Tap @MBCC2017, Blue Session. Hazy golden, white froth. Malty, slightly funky aroma. Flavour has a little yeast, fruit and funk, slightly floral. Rather light but quite drinkable.

Nice slightly fizzy-creamy mediumlasting head. Aroma is slightly dry sour-ish floral, hay, weeds, soda powder, minerals, sour grass, flowers, bark, paper, hay, old rope, oak. Taste is slightly dry floral, weeds, hay, yeast, minerals, flowers, grass, paper, fruit stones, oak, old rope. Medium bitterness, slightly watery and harsh mineraly mouthfeel. Not my cup of tea.

750mL bottle at Hill Farmstead, Greensboro Bend, VT. Pours cloudy yellow with a large, fluffy white head. Aroma is tart lemon, yeast funk, some grass, and a good amount of wood. Taste is similar; sour lemon and lots of funk, filled out with the addition of wood, some hay, a little white wine grape, and a touch of lime. Somewhat reminiscent of a gueuze. Clean, dry finish. Light/ight-medium body. Smooth carbonation. Creamy, pillowy mouthfeel. This one lives up to the hype.
