Ar: Generically sweet honey, pineapple, and a hint of vanilla-like oak. Ap: Yellow and clear. T: Fairly sweet up front with an alcohol warmth, fairly clean; soft, cotton-like maple flavor, though very subtle; some light acidity that combines with the alcohol to balance out the sweetness a bit; honey flavor is certainly present, though fairly nondescript; a touch of green pepper; beeswax and pineapple. P: Medium-light body and still; finish is medium-dry. O: A fair enough dessert mead; the honey flavor is certainly there though it is sort of generic; some nice maple flavor on the palate; alcohol heat is ever so slightly too noticeable, but certainly clean overall; the pineapple note is sort of flabby, seems to be sorbate, though I cannot be certain. Bottle share at The Watford Non-Beer Tasting, thanks to Leighton. As Sap House Sugar Maple, 13.8%, wax neck, maple and honey blend ferment. Pale orange, clear, still, no real head. Aroma is plasticky, rubbery, booze. Body is oily with low carbonation. Taste follows aroma and is dry and gin-like, booze, plastic, waxy, resin. Interesting. A bit harsh really. 33cl clear bottle shared at the Non-Beer Tasting @Fergus’, Watford. It pours a clean rich golden color with no head. Aroma is sweet with notes of baked apples, tropical fruit, bark, vanilla. Taste is also sweet with more notes of tropical fruits, vanilla, white chocolate and spiced rum. Medium to full bodied, oily, low carbonation. Bottle thanks to Leighton. It pours clear very pale gold with a tiny white head. The aroma is sweet, rich, fruity, honey, maple, apple, pear and earth. The taste is smooth, rich, tangy fruits, wood, earth, floral, oily, apple skin, wood and a touch of acidity even. Finish is rather warming. Interesting, but a bit rough around the edges.

Bottle shared at the Watford tasting, many thanks to Leighton for this one. A bright golden yellow coloured pour. Aroma is sugary maple, hot alcohol, earthy, floral honey. Flavour is composed of earthy honey, hint of woody maple, dry woody finish. Some hot alcohol in the finish. Palate is medium sweet. Bottle shared in Watford - picked up in NH. Pours clear yellow-gold. Rich honey in the snout, light alcohol, florals, tangerine. Medium sweet flavour with definite alcohol boost, some lemony accents, moderate honey, some spicy notes, marmalade. Medium to full bodied, and lightly chewy. Clear amber pour. Apple and honey in the nose with maybe just a hint of maple. I would like to taste more of the honey and maple in this, but its like my mouth is full of black tea leaves and a very astringent finish.
