Tasted on 1/13/12 from a capped 22oz bomber bottle that I got as an extra in a trade some time earlier. Pours clear, but very deep and dark mahogany with a thick white head that leaves average lace. The nose is vinous red wine, vanilla, some caramel, dusty, and a hint of green hops. The flavor is earthy, vinous barrel, with some dusty caramel malt, and just a touch of green hops. Smooth creamy flavor, malty. Flavor of roasted malt, chewy toffee, red wine. Warm, but not alcohol hot. Kind of like how the certified evil tasted on tap. 22oz bottle consumed at Stub during Darkness weekend...A dark brown with amber on the sides, a half finger of light head but light carbonation...A light aroma red wine, wood and a touch of hops, the combo sounds ok, just nothing great...The taste is bland, dark fruits on the back, light hops. The feel is so light, less than water that it really distracts the beer. Aging an alt beer was not a good idea, this beer is a light mess not worth drinking and the wood doesn’t improve it.

Bottle, many thanks to Andy. Pours darker than I thought from the bottle, cola brown with some ruby edges. Moderate, big bubbled-head. Nice, slightly sour vinous notes on the nose and a hint of earth. Sweet caramel malts, and mild barrel notes. Taste loses those a bit, but is still quite solid. A pretty garnet hue shows through when held to light. Otherwise, this one is a slightly hazy deep brown with a thin light tan head. A sweet smelling brew with hints of the vinous character coming through. There is also caramel and raw grain. The taste is like cola mixed with a bit of wine. There is a metallic finish with green wood. There is a little bit of bread crust. Schmaltz’s Alt is a good brew, but the wine aging really did not do this one much of a favor. Hazy Dark Brown color with some reddish highlights. small foam head on top drizzles down to a thin lacing.
Smells of malt and sour cherries. some vanilla and oak. not quite as rich of a smell as regular schmaltz. i dont’ get as much of the coffee or chocolate, more sour barrel notes
tastes of dark sour cherry and oak followed by a nice little malt kick. bits of roast with subtle hints of coffee and chocolate. Vanilla comes out more as it warms. could use more malt to combat the barrel sourness. I taste the wine.
the mouthfeel was a tad on the thin side, but not bad for a barrel aged beer that has 5% ABV. could use a bit more heft so the barrel doesn’t dry it out so much.
drinkability was decent but the sour barrel tastes got old as i got to the 8-10 oz range, getting up to 12-16 oz i was just done with it.
overall not bad attempt here by schell’s to barrel age a beer. I think they need to chase a little stronger brew for a barrel age though. looking forward to the next attempt.
I think this would pair nicely with some gamier options. seared elk, venison, or duck with cherry sauce. definitely thinking something that captures gamier flavors with sweet and sour notes. cranberry and wild rice stuffed pheasant could also be a possibility.

Very nice brew,Nice redish/brown color,small off white head that had a short hang time then faded leaving little behind.Nice caramel and very mild hint of hops in the background some hints of maybe nuts and very faint fruit i could be wrong i’m still getting over a cold.The flavor was very nice good malt side up front then the barrel ageing comes on with some nice hints of oak and wine the hops seem to have not come to the party.The brew finishes off nicely with a slight malty mildy sweet finish.Over all a very nice atempt from these guys.You can tell there trying but there not quite there yet. Bomber, thanks to Bob! Poured deeper brown with a creamy cap of tan head. The aroma picked up toasty caramel and bready malts with a faint red wine and oaky accents.. soft overall and well-balanced. The flavor found more bread and dry caramel at the core.. tart and tangy barrel throughout (somewhat metallic).. tangy finish with a little more wine. Light-medium bodied, tart, and very dry on the palate.. just a decent feel and flow. This was aiight.
