Natural cider from Astigarraga.

VARIETY
Blend of natural wild apples such as Txalaka, Urtebia, Judeline and Judor.

PREPARATION
This cider is produced using advanced methods while maintaining tradition and followed by fermentation in wooden and stainless steel vats for a minimum of 4 months.

TASTING NOTE
Colour: Harvest yellow.
Aroma: Fruity and fresh.
Taste: Very homogeneous bitter-sweetness.

Bottle. Nose is lemon, vinegar, creamy funk. Cloudy pastel yellow with light lace. Funky but not near as sour or acetic as their natural cider, much more approachable actually, but still acetic and sour. Light sweetness remains underneath. Oily body.

Bottle from ultracomida, Aberystwyth. Cloudy golden cider with some floaters. No adverse flavours from these though. Aroma is farmhouse funk, apple pulp and a little wood. Taste is raw apple, green skin, farmhouse funk and tangy. Medium bodied. Very good.

Pours cloudy golden-greenish with vanishing white head. Tart, apple nose. Light body, average carbonation, oily texture. Taste is moderate tart, fruity, ends dry and little sweet. Long aftertaste.

Visual: Pours opaque golden orange with no head and just a few bubbles, settled yeast in the bottle.



Nose: pukey yeasty-acidic, woody apple cider. (lvl-9)-pungency



Attack: light crisp, dull-low CO2 entry



Mid-palate: tart, (lvl-3-sweetness), tangy-sour-pukey, dry (40/60)-red/green apple sour



Finish: woody-lactobacillus, tart/off-dry, residual tanginess



Summary: Big tangy sourness in this one; it reminds me of sour/wild ales but with a brighter apple edginess. Quite woody and natural-tasting, a lot of tartness as well. Good complex textures, decent body and flavour, not that sugar aggressive which is a nice changeup, especially for ciders.

330ml bottle from Ultracomida, Aberystwyth. Pours cloudy pale orange, very thin ring of head. Aroma of woody apple orchard and sour horseblanket funk. Taste is sharp, fresh, raw eating apple, fresh tangy sour with a dusty tannic finish.. really quite a compelling sour complexity with some interesting traditional Spanish cider apple flavours.

Bottle - Aromatic, funky and light acetone. Cloudy gold with a small white head. Tart, acidic, slight acetone and funky apple. A little harsh but interesting. The funk makes this pretty good.

Bottle from local delicatessen shop. Best before 150716, lote L15-38. Slightly hazy green-yellowish coloured. Nose is musty, cheese, sour apples. Very nice. Flavour is sour apple, phenoles, slightly cheesy, acidic, and sour. A bit too acidic to my liking. Ok cider nonetheless.

hazy translucent honey, thin large bubbled white ring. Light green apple skin, sourness with bright acidity, light honey sweetness, lightly peppery. Softer, more muted flavor, creamier, thin palate with light booze. Too soft in flavor, short finish is hot but otherwise pleasant.

12oz bottle pours a clear, straw gold with some bubbles at the surface instead of head. Nose has some mild honey sweetness, fruity apple, lightly earthy. Flavor has a mix of apple and honey sweetness, lurking cheesiness, tart green apple too. Crisp, lightly sweet finish.

Green bottle. Poured a hazy yellow orange color with no head. Aroma is light smoke, some apple notes. Flavor was apples, smoky wood. Interesting.
