COMMERCIAL DESCRIPTION
Tradition and knowledge are important for both natural cider and the Zapiain family. It is a natural drink with body, fizzy with its own bubbles from its own fermentation. It is light and easy to drink. A pleasure for both its customers. It should be drunk cold, but not too cold, in a long wide glass.

Spritzig säuerlicher, vollmundig apfeliger Antrunk. Im Mittelteil stärker werdend, sehr weich, pur, natürlich. Langer Nachhall, die Säure bleibt lange konstant. 11/10/11/12/9/12

(bottle, 75cl, skillfully poured by SinH4 “from” the balcony into a Hessian Geripptes) Cloudy, pale golden colour without any foam. Citric tart and tannic apple-fruity aroma. Quite acidic flavour, medium to light bodied with a calm carbonation. Acidic apple-fruity, citric and slightly funky taste; dry and sour-fruity, tannic and slightly vinegary finish. With its acidity comparable to a Lambic. 08.VIII.17

(bottle) murky deep golden colour with a quickly-diminishing frothy white head. aroma of white wine vinegar and candle wax, slightly harsh, with a touch of green apple, some plums and straw. flavour is more candle wax and some black olives, quite phenolic, with a hint of custard in the semi-dry finish. medium-bodied with average carbonation.

Cloudy yellow. Aroma is apple, lots of lambic stuff, champagne, chalk. Taste is sour and apply. A bit chalky on the tongue. Slight vinegar but good. I like.

Bottle from a supermarket in Benasque. Poured from a height, as I hear it’s supposed to. Hazy-murky golden color with white head. Aroma is barnyard, some tropical fruits, apple funk, earthy, cheesy feet, mineralic, definitely has a touch of Lambic feeling. Taste is tropical fruits again, apples, earthy, funky, manure. Bone dry mineralic, a bit mealy finish. Just a touch of carbonation, but it’s basically flat. Nice stuff, especially considering that his is supermarket stuff and cost 2.xx€/750ml...

(Bottle, 0.375 l - BB 25.11.16, at Tapas Bar Inez, 20170211) The cider poured pale golden and cloudy. No head. Aroma had tart apples, acidity and wood. Palate was medium bodied and dry with very low carbonation. Flavours were tartness, sourness, apples, acidity and wood. Aftertaste was tart. A pleasant tart cider.

Robe jaune pale, très légèrement trouble. Nez pomme acide, vinaigre. Attaque très acide, pomme, peau, léger aspect levuré . Forte effervescence, longueur moyenne, bonne acidité. Bon cidre, acide, fermier, représentatif du cidre basque.

Bottle as gift from my cousin. Light golden color with minimal white head. Aroma of apples, barnyard, funk. Dry, apple sour taste with, barnyard, leather. Dry finish.
