Bottle. Hazy hay yellow liquid with minimal white head. Aroma of green juicy apple, apple skin, light lemon, light wood and red apples. In short: funky watery cider.
Pours cloudy greenish with little vanishing white head. Good lacing. Funky, sour, barnyard, apple nose.Light body, average to high carbonation, crispy texture when drank right after distance pouring. Some viscous mouthfeel, still a bit short one, some watery, little sour finish.

The look: Partly cloudy yellow-blonde body with no head to speak of.
To me a typical Sidra is: Funky aroma of medium intensity with many light color fruits in the back (not just apples). Body is medium in size, a texture that is both juicy and doughy and with minimal carbonation. Taste is a lot less apple-forward than a regular cider with apples but also various light color tropical/citrus/exotic fruits. Yeast presence accompanied by a bready sensation. Typical Sidras have a mild sourness and ends with a mild-medium acidic bite. Thirst quenching and also a bit nourishing.
This one: More intense farmhouse character, more doughy bread, a little more carbonation than average. Slightly above average example of the style. The wild farmhouse character of Sidras is apparently obtained by fermenting the liquid with a dead cow in the tank according to an internet rumor I just started in this rating.
Sampled a couple of times while in Basque country. Pours a cloudy, dandelion gold with zero head. Nose is solid, cheesy, apple skins, apple juice, some mild lemon, a little earthiness. Lovely light pressed apple juice aroma. A touch of cider yeast. Very pale and slightly hazy. Dry in spades, very sharp, almost a vinegary corner. Smoothish palate, doesn’t feel harsh. Slightly dirty taste, some yeast, some higher aromatics that make me think I’ll go blind. Quirky, and not for me.
I wish I could get this in Australia!!! Currently again in san sebastian where it is available in abundance. Pours a goldy yellow with carbonation visible on pour. Smells,. Sour apples, a lambic style Brett funk a little musky too. Tastes.. 27/11 From Txotx (barrel) at Sidreria Galtzagorri, Bilbao. It poured hazy lighter yellow body with medium sized head (poured from high, of course). Now, my notes are in a smartphone that is not here currently so just rating it to keep in the order. Quite good, easy going Basque cider!
