La Simon Dinkel, la bière aux trois tiers

Deux tiers de malt d’orge et un tiers d’épeautre non malté provenant d’un agriculteur voisin de la brasserie à Wiltz.

Cette spécialité non-filtrée a été créée en 1998 et titre seulement 4,5% d’alcool, ce qui renforce sa fraîcheur et sa délicatesse. Son trouble naturel provient des levures restantes à cause de l’étape de la filtration qui a été omise dans ce procédé artisanal.

Moins amère et plus douce qu’une bière blonde classique, cette bière est légère et digeste.

Yellow cloudy with small white foam. Sourness, dry and bitter. Fruity when you have it warm a bit.

Nocturne (1992) - Cheshire, ENGLAND - SEP 17, 2015
Tap at Go Ten Café, Luxembourg City. Cloudy yellow. Frothy white head. Slight soapiness and chemical note. Lemony. Light bitterness. Decent body and balanced well enough. Not far from a hefeweizen, but not as yeasty tasting. Decent enough.

On tap at Go Ten Cafe. Yellow glowing body with medium head. Nose of wheat, lemon, cereal. Taste also of wheat, citrus and bananas. The whole thing a bit subdued and could have been punchier.

Clear ellow colour with a small frothy white head. Aromas are pretty subtle overall, showing some hints of toffee, cereals, grains, corn and butter. Lively, thin texure and a light crisp body. Some light sweetness is balanced by some bitterness. Short finish. Pretty boring.

Bottle at the hotel. Very pale, small white head. Tiny bit of grain in the aroma, not much hop, not much anything... allowed it to warm and still nothing more than vague cleanness, corn, wallpaper paste. Almost entirely flavour free - very slight grain, tiny bit of cereal, and the littlest bit of hop to finish. Very drinkable but what’s the point?!

(Draught at Go Ten Café, Luxembourg, 16 June 2014) Pale yellow colour with brief, white head. Malty, fruity nose with citrus, grain, hay and a strange touch of sewage. Malty, fruity taste with notes of apricots, bread, grain, and grassy hops in a dry finish with a balanced bitterness. Medium body, quite dry. A strange sourness in the nose disappears in the mouth, making it quite interesting. Enjoyable.
