COMMERCIAL DESCRIPTION
La Simon Dinkel, la bière aux trois tiers

Deux tiers de malt d’orge et un tiers d’épeautre non malté provenant d’un agriculteur voisin de la brasserie à Wiltz.

Cette spécialité non-filtrée a été créée en 1998 et titre seulement 4,5% d’alcool, ce qui renforce sa fraîcheur et sa délicatesse. Son trouble naturel provient des levures restantes à cause de l’étape de la filtration qui a été omise dans ce procédé artisanal.

Moins amère et plus douce qu’une bière blonde classique, cette bière est légère et digeste.

Clear medium yellow color with a average, frothy, good lacing, mostly lasting, white head. Aroma is moderate malty, grain, hay, toasted, butter, fruity notes. Flavor is moderate sweet and light to moderate bitter with a average to long duration, fruity, light butter and toffee. Body is medium, texture is oily, carbonation is soft. [20101127]

33 cL bottle. Pours cloudy yellow with a small white head. Aroma is butterfish to yoghurt and toasted malty. Dry, toasted malty and light Cornish. Bitter and toffee, toasted malty finish. Ends dry, bitter and vague citric.

Bottle @ Quinns. Pours a very pale yellow color with a small white head. Fruity malty grainy and spicy aroma. Sweet malty and grainy flavor with some spicy hints. Grainy malty finish with some fruitiness in the aftertaste.

Bottled. Hazy yellow colour, small white head. Aroma is quite typical malts and hops, maybe slightly sweeter. Flavour is malts, hops and very bready. A pleasantly balanced and refreshing brew.

[Bottled] Pale yellow, hazy, rich head. Swetay paper aroma. Fairly sweet, medium bodied, strong notes of dough. Low bitterness. That touch of dough gives it some life and discerns it from the river of pale lagers.

UPDATED: JUN 13, 2005 (Bottle 33 cl) I’ve had spelt-beers from Belgium and Germany before, but this blend of 70% barley-malt and 30% (unmalted?) spelt is pretty unique I believe. Beautiful yellow colour, unfiltered. Decent Head. Curious - but not unpleasant - smell that seems familiar, I don’t remember from what though. In the first mouthfull this has a pilsener-presence, but the spelt adds a spicy edge. Quite interesting variation of a pils. 260601
