A dark, spicy and wholesome bottom fermented luxury beer. Besides pilsener malt, dark malts have also been used, which gives a richer, but also slightly heavier caramel character. Honey has been added.

On tap at Søgaards Bryghus, Aalborg. Pours dark brown with beige head. Aroma of chocolate, dark bread, caramel. Tastes slightly sweet with some balancing bitterness. Highly carbonated, full bodied.

50 cl. flaske. 5,5 % . På etiketten står der Ulvebryg men skulle være Klosterbryg. Mørk smagfuld men også lidt vag i efterklangen.

Big beige lasting head. Clear reddish deep brown body with carbonation. Fruity toasted butter aroma with spicy notes. Sweetish roasty caramelly licorice taste with spicy notes. Mid-bodied. Mild mouthfeel. Dryish roasty wooden spicy aftertaste with buttery notes. Kind of flat and uninspired. (0.5l bottle, from Føtex, Frederikshavn.)

Amber, creamy beige head. Smell of caramel, fruity malts, dark fruits and raisins, complex spices and yeast. Medium sweet, dark fruits and dried fruts, also some nuts. Moderate bitter finish. Quite complex and interesting. Probably the best i tried of Søgaard during my stay in Aalborg

Tap @ Søgaards Bryghus. Deep coppery amber with a small offwhite head. Sweet and somewhat buttery aroma. Hints of toffee and caramel. Taste is balanced with mild toasted malts and mild bitterness. Light body and medium carbonation.

Bottled as Knuthenborg Bryg Dark: Thanks to Papsø: Served in a Chouffe glass: Dark brown pour. Medium sozed beige to light brown ish foamy head on top of a deep dark hazy brown colored beer. Aromas of liquorice, toast, toasted malts, leaves, autumnal herbs, some soap and some chalk. Flavours of liquorice, raisin, flowers, toast, some dried prunes, bitter, sweet tar, brown sugars, cream, autumnal herbs, rye, hint of older leaves, bread, yeast and a sprinkle of some spices. Overall a sweet raisiny and liquorice flavour. Aftertaste is a smooth mix of raisin, toast, creamy autumnal herbs, liquorice and bread. Low carbo, soft creamy mouthfeel, medium to lightly fuller body and a creamy light oiky texture. For 5.5% this is thick, quite strong and filled with toast, raisin and especially liquorice. Nice beer. I like it.
