COMMERCIAL DESCRIPTION
AH, A PARADOXICAL CASE of small = large. After decades of tinker, tweak, improvise and analyze, David honed in on a surprising insight: size matters. Smaller organic apples simply yield bigger, more intense flavors. And so, The Hatchet was born. Intensity behind us, the subtle work of balance and nuance began.

Using a unique blend of native organic apples, we handcraft each batch to bring out fresh, ripe apple aromas, carefully pairing sweet and tart varietals to ideal effect. The result is a clean, refreshing hard cider with noticeable complexity and a lively finish. All hail the little things. To our tastes, theres simply more going on in here. Cheers.

Bomber from Tiffanys- Not much head. Light golden color. Notes of sweet apple, vanilla, and some funk at the end in the nose. I think it might be infected. It has some of those vinegary sour taste alongside of apples sweetness. Is it supposed to be that way?

12 ounce bottle from Whole Foods Charlottesville, 3/3/16. Clear amber with a bit of a head. Aroma of intense sweet apples, caramel and a tinny note. The taste is dry apples, earth, vinous notes, fresh apple juice. Medium bodied, moderate carbonation.

Apple aroma, slightly funky with oats underneath. Crystal clear amber, still. Semi-dry apple, farmhouse. Light body, spritzy, tangy. Carbonation is too lively, but otherwise, this is a fine cider.

12 Fl. Oz. Bottle. Poured fizzy, pale yellow, clear, minimal white head. Aroma of red apple, honey, and floral notes. Taste is slightly tart, obviously some apple, not too acid and fairly dry. Very nice cider, crisp, refreshing, drinkable and enjoyable.

On draft at Cajun Cafe Cider and Mead Fest 2015. Pours a light yellow with a white ephemeral head. Nose is red apples, some sweetness. Flavor is similar- simply apples- light in body and very nice overall. A light and refreshing cider.
