Biscuity honeyed malts are efficiently dried out by pepper-y brettanomyces, as passionfruit and peach esters develop even more complexity for this elegant Wild Ale .
Further Personal Perceptions:
-A generous head of foam tops the misty golden amber.
-The pillowy effervescence is perfect for the low residual sugar level.
-Fruitiness is also citrusy throughout.
-I would not have said the barrel used to have red wine. The wild yeast seems to have done a great clean-up job.
-This is as complex as it is drinkable. I hope they make it more often!
Hazy golden color with a small, white head that left nice lacing on the glass. Aroma of vanilla, toasted malts, citrus fruits, some red wine and light alcohol. Bottle at the Funky 6. Pours cloudy gold with a slight, off-white head. Lightly funky aroma, musty, with some toasty malts. Fairly sweet flavor with some flowery sweetness, Belgian sugars, funky yeast. Light to medium in body with fine carbonation. Light spicy hops, a little vinous, a little funky. Peppery hop finish. Really well constructed and nice. Pale amber color.

Thanks to whoever shared this at RBWG 2015 grand tasting. Pours a hazy orange with a white head. Nose is some stone fruit, some funk, some Brett, and some malt. Appearance : Hazy pale amber.
Aroma : Great brett with light tartness. Awesome nose.
Taste : Nice brett with a light bitterness. Nice brett on the finish. Finish rather spicy. Some yeasty esters.
Overall : Great beer. Nice nose (better than taste). Nice light tartness. No real trace of the wine barrel. Well balanced and quite drinkable. Delightful beer.

UPDATED: JUL 3, 2011 Very murky honey gold orange, not much head... nose is awesome, what you imagine a barrel aged Orval would be, vinous brett with oak... To much brett on the taste, distracting, oak pine hop finish... Gets better as your drink it
