Bottle. Pours a cloudy yellow body with a large airy head. Aroma of fruit - pears, peppery/clove spices, and cereal. Dusty palate with faint alcohol presence. Quite dry and bready with yeast characteristic fruitiness. Sparkling carbonation. Solid, though not outstanding.

12/25/06: Bottle.
Thick gia-normous, white, pillow top head accompanied by a hazy, dirty-golden-yellow body. Nose is full of yeast, wheat, barnyard, lemon and clove. Flavors include bread, grass, nutmeg and spice. Chewy mouth-feel and quite earthy. Merry C-mas to me from my hunies.

Corked and caged 750 ml bottle as pictured, thanks to a trade with hopdog(youre the man!). Served into a Duvel goblet, we have a hazy body the hue of ripe banana skins. Body is animated with tiny bubblies. Hefty vanilla head is very sturdy, eventually stabilizng at 2 cm, and becoming rocky and pitted. Lacing is of the island chain and satin bedsheet variety. Aroma is coriander, white pepper, cirtusy lemon, with a cornucopia of idyllic pasture notes. Earhty and herbal hop and yeast characteristics roll you around in the grass, evoking thoughts of a mountain pasture in springtime, teeming with sheep. Some are freshly shorn. Lovely! Medium body has a spritzy and velvety feel. Taste is intense and relaxing. Dry herbal bitterness benefits from the subtle hop and yeast profile. Mild spicing seems to be coriander, white pepper, and mint. Citrusy lemon is enhanced by a note of tangerine. Orangepeel bitterness joins for the finish, as does a dirty note of baked sheep dung and recently shorn wool. Exceptional in all respects. Rivals the better Belgians of the style. Whee!

Tasted at YeHA! 2006 in Montreal. App.: med. straw, sl. cloudy, fluffy white head. Aroma: a bit of honey, spice and cat pee, tangy, a little malt, herbal and leathery. Palate: very effervescent, somewhat thin and a little astringent. Flav.: immediate tartness, bracingly bitter finish, herbal, mineral, sl. sweetness. This is too complicated for my amateur palate and I think I need more experience to rate it properly...

Bottle: Hazy yellow gold in color with a big white head. Aroma, funky, bready, some yeast, lemeon, and other light fruits. Flavor, funk, some yeast, lightly bready. Kinda odd, it didnt really do it for me.

UPDATED: AUG 4, 2008 2006 bottle drank fresh. The cork came out hard. The pour is shiny gold with a huge creamy white head that diminishes to rocky lace. Aroma is spicy sweet malt but also dried hops, dusty and yeasty. A delicious mix. Sweet up front with a palate cleansing dry finish. 8/5/8/4/18

ADD RATING: 750ml bottle. Not sure of the age, but probably at least a few months old. The pour is a beautiful rich golden color with a thin layer of tight white bubbles an lace. The aroma is rich sweet malt and dry crisp hops. The upfront flavor is sweet and smooth, the finish is dry and makes it refreshing. I do like this beer a lot. 7/5/8/5/18

UPDATED: DEC 21, 2009 Cloudy golden-yellow body topped by a large big-bubbles white head with medium retention. Aroma is saison alright with some barnyard and a hint of pears. Taste is fruity, a bit salty/minerals, very yeasty, some unflavoured pop-corn and some dry hops. Full body with an overall dry sand-paperish sensation. Good but didnt meet my hopes. Looks like the Saison Deluxe is step below their regular Saison. Maybe Id really love their Leftover Saison.

Shared Ernests landmark bottle. Beer is cloudy, light gold with a massive, rocky, off-white, diminishing but lasting head.
The aroma is attractive; lush and fresh. Its malty with light notes of toasted grain, light notes of shortbread; Hoppy with a moderate herbal note (like mellow rosemary), light lemon zest, buttery chamomile; Yeasty with a light note of dough; MIscellany include light notes of tropical fruit/pineapple, clove.
The flavor is moderately sweet, lightly bitter, moderate acidic with a long, slightly warm, lightly bittersweet finish.
The body is medium, the texture is velvety and the carbonation is lively. Trace of tingling astringency on the gums.
Perhaps my favorite taste from Southampton so far.

Rating #3500, reached at age 35, and 5 years since my intro to RateBeer. 750mL bottle (made at Sly Foxs Royersford location). Head is initially huge, frothy, white, mostly lasting. Body is hazy medium yellow, bottle conditioned. Aroma is lightly to moderately malty (toasted grain), moderately hoppy (flowers, herbs), lightly to moderately yeasty (cobwebs, mold), with notes of lemon zest, pepper, Juicy Fruit gum, clove. Flavor is moderately sweet, lightly to moderately acidic, lightly bitter. Finish is lightly to moderately sweet, lightly to moderately acidic, moderately bitter. Medium body, velvety texture, lively carbonation, lightly alcoholic. Excellent rendition in the Dupont mold. Sweeter than the latter (almost too sweet to really be in the saison family, but the finish just barely saves it), and softer in the nose, but has the same lemony-spicy character. Good effort, and Im personally very relieved this was made at Sly Fox instead of Olde Saratoga.
