COMMERCIAL DESCRIPTION
Saison Faucille results from a select harvest of barley, wheat, rye and oats. Complex character and a silky mouthfeel help to define this one-of-a-kind farmhouse ale.

Diogne (1207) - Mirabel, Quebec, CANADA - JUN 10, 2011
Bottle sampled at Mondial de la bire 2011. Hazy straw color with a huge foamy white head showing good retention. Aroma is citrusy, sweet and slightly sour with floral and herbal notes, pale malt, very fruity, yeast and alcohol. Flavor is spicy with pale malt, yeast, floral and herbal notes, fruity, honey, mushrooms and a bittersweet aftertaste. Very complex. Medium body with a slightly sticky mouthfeel. Lively carbonation. Very good! More residual sugar than the average saison.

My Bottom Line:
Exuberant yeast showcases banana esters and dough within buoyant floral, herbal hops and comfortable cereals for a delicious American Saison.

Further Personal Perceptions:
-A veil of foam covers the misty golden.
-The fluffy natural carbonation made this quite drinkable.
-The flavor profile is perhaps more intense than your average Saison.
-The yeast signature was quite loud throughout, but it never felt out of place.
-Citrus fruit emerged once in a while.

Bottle.

Thanks to Steve for this bottle. As I begin to pour this one in the glass, white foam skyrockets to the top, leaving an initial 3 inch head that recedes pretty quickly to a small cap and leaves clumpy lacing along the sides. Light lemon zest initially in the nose with some pears and grassy notes. Little bit of funk but just as much light grains as well. The taste has a little more earthy funk that the aroma, especially in the beginning. It gives way to some much sweeter flavors including apricots and Belgian yeast. The finish is dry and grassy with more spices than I got in the nose. Its highly carbonated, maybe a little too much, and light bodied. I can actually feel a little bit of alcohol burn as it goes down which surprised me. This is a nice light bodied saison that has a little more fruit and grains than most while it dials down the spiciness. Excellent.

25.4 oz bottle. Muddy brown with a lovely meringue head that im tempted to eat with a spoon. Nose is milled grain, violets, ginger and rose hips with a hint of caramel. Creamy, silky and lush on the tongue melting into a foamy, fizzy finish a la Pop Rocks. Taste is preserved lemon, elderberry, spicy rye and bitter grass. Rustic and subtle. When the brewpub nails a saison its a beautiful thing.
