We rely on age-old tools in the brewery despite being surrounded by high technology. As a sort of compass, we use the six pointed brewer’s star to help navigate uncharted brews. The cardinal points of water, malt, grain, yeast, hops and a brewer make the baseline. From there anything goes. Sometimes the journey is as important as the destination.

You’ll notice a slight bitterness in Compass derived from our use of rose hips accentuated by high effervescence. Drink it cold from a fluted or tulip glass. And by all means, avoid sea serpents.

Pours a pale, cloudy gold with a big fluffy white head. Bright citrusy aroma. Lemon zest, orange peel, grapefruit, and floral notes with a slight Belgain funk. Light crisp mouthfeel with a high level of carbonation. Finishes fairly dry.

This one is part of the LCBO 2017 Summer Beer Program. I wasn't sure if this was an IPA or a barley wine, I wouldn't thought to be in this category, but overall, very savoury.

hopdog (13258) - Lansdale, Pennsylvania, USA - NOV 16, 2017
22oz bottle. Poured a copperish / orange color with a medium sized off white head. Citrus, some earth, and floral.

Samtzu (629) - Palmerston North, NEW ZEALAND - OCT 10, 2017
650ml bottle. Pours a slightly murky gold with white dots across the board. Large Malty nose with lots of hops hidden away. Medium body white cheese carries a strong g malt forward with hops lingering over the top. Considering this is an aged beer by the time we tried it, it's still excellent.

Lubiere (14262) - Ottawa, Ontario, CANADA - SEP 25, 2016
A hazed amber ale with a thin white head. In aroma, nice musky fruity malt with light resinous floral hops, light citrus pulp, light caramel, nice and herbaceous. In mouth, a nice sweet fruity caramel malt with loads of citrusy pulp, light tropical fruits, resinous floral hops, oily mouth feel, nice and pleasant. Bottle from LCBO, bottled 04/23/14.

A DRY YEASTY Belgian strong. Slightly fruity and musty aroma. Flavor has a bitterness in the finish that was unexpected. OK.

This is a pretty weird one. Sorta like champagne with a bitter finish. Really dry. On another sip, I realize that bitterness is booziness. Interesting try. Not sure if I’d go back to it. I don’t dislike it, per se, but just isn’t really working for me.

Bricks (1160) - Delaware, USA - APR 6, 2016
UPDATED: APR 10, 2016 Very nice golden yellow... Aroma is nice, but faint.. some citrus, spices. Tastes like an Imperial Wit (if there’s such a thing)... though it wore on me over time, maybe too many rose hips? Good in small amounts, but I did not react well to this beer.

Bulk_Carrier (6064) - Vermont, USA - APR 6, 2016
This was poured into a tulip. The appearance was a glossy pale/burnt orange color with a thin white foamy head that quickly dissipated. A one ring lacing clings nicely around the glass. The smell takes the rose hips, mostly dry and quite floral with some slight earthy, grassy and piney hops. Some sweet Belgian malt, bready yeast and subtle Belgian spice slide in underneath. Light banana. The taste favors the previously mentioned flavors and definitely has the dry floral to banana aftertaste. Quick dry floral to piney finish. On the palate, this one sat about a medium on the body with a good sipping quality to it due to the dryness. Since I’m thinking because I’m having this a bit aged, ABV most likely has dropped so I’m not feeling the effects. Overall, as a Belgian Strong ale, it definitely works. I’d have this again, nice one.

Poured from a couple of bombers, citrus, creamy, sticky, strong, dry at the end, going to need a compass to find my bed or I’ll wake up on the floor.

Pours a slightly hazy, dark banana yellow color with a one finger, frothy white head that slowly settles into a lasting ring. Pretty good retention with streaks of lace left behind. Earthy, slightly floral aroma with grassy and piney hops, pale malt, flower petal and bready yeast. Some wheat beer character with bread, banana and citrus peel. Subtle potpourri presence blended into a hoppy wheat beer-like aroma. Medium body with tight carbonation and crisp hop bitterness along with rose water and a pale malt backbone. Hints of biscuit and cracker along with malted wheat, banana bread and subtle peppery spice. Basically a decently hopped light wheat beer with strong flower petal bitterness. Easy to drink with a well masked ABV but not terribly interesting. The flower presnce is too strong for my liking, overpowering the hops and wheat beer elements. Also the malt profile could have been a bit more prominent.
