A refreshing modern expression of the world’s most ancient fermented drink. This mead features the floral notes of Star Thistle honey produced at Sleeping Bear Farms in northern Michigan.
The aroma is light honey. Pours a clear light yellow, no head. The taste is a little sweet and a touch bitter. The body is medium, the texture a slick creamy, the carbonation soft and the finish a little bitter. Overall pretty good.
Bottle shared by Puddintane. Thanks Pud! Clear blanc with no head, no legs and slight carbonation. Aroma consists of honey, and semi-sweet white wine. Sweet honey flavor with some florals before a semi-sweet finish. It seems like semi-sweet meads are dying art, but this one is very nicely done.
Small sample followed by "howler" draft pour followed by 750 mL bottle, all from the meadery taproom (not all at once!). Pours a still, clear pale golden, like a white wine. Aroma includes medicinal honey and biscuit. Fairly sweet honey flavor, medicinal herb and licorice. Overall has a honey herbal flavor. Quite good.
