COMMERCIAL DESCRIPTION
St. Bernardus Prior 8 is a traditional Abbey Ale brewed in the classic "Dubbel" style of Belgium’s Best Abbey Ales. It has a ruby to purple color, smooth, creamy richness of texture that is almost oily, and a malt-fruit complexity reminiscent of coconut. It finds the perfect balance between sweet, bitter and malty tastes. One of the original recipes from the days of license-brewing for the Trappist monks of Westvleteren.

Served in a chalice. Pours an opaque brown with a small beige head. No visible carbonation. Aroma: Very grapy. Strong malt notes, a bit of lemon, ginger. Palate: thick bodied, fizzy, strong. nice long finish. Taste: sweet. really nice and complex

Backlog, Many bottles over the years, This one was in 2011. Pours an amber brown with creamy 2-3 finger head. Nose and flavor are belgian candy sugar, malt, plum, clove, banana, fig, and other typical belgian ale notes. Malty finish with light warming in the chest.

Pours a hazy light brown with average carbonation and a big pillowy white head which quickly dissipates. Aromas of bananas, some spice, dark berry fruits, roasted malt, caramel and rich alcohol. Taste is rich, bold fruitiness with caramel and toffee which is well balanced by hop bitterness. A great example of a Dubbel.

330ml bottle at The Trappe Door. Pours chocolate brown with a fat off-white head that eventually fades to a persistent cap. Dark malt, yeast, cereal, round citrus flavors, dark fruit, burnt sugar. Light-medium carb, full bodied. Keeps changing as the glass empties. Delicious.

Aroma is a bit shy, but as it heats, it grows: fruity and roasty with roasted malts, milk chocolate, roasted walnuts, dry earthiness, pu-erh tea. Taste is balanced, not too sweet, not too alcoholic. Sweet malts, spices, dark fruits,nice alcohol burn, dark medicinal teas, caramel. Very nice dubbel.

Shared a bottle at home with Rabo. Nice brown color. Taste was very smooth, good. The aftertaste was a bit disappointing.

I obtained this bottle at a well stocked Total Wine in Dallas and held it for four months until the right time. Which is now. A great introduction, it pours a rich amber-brown body into my favorite Chimay Trappist glass yielding a spun cotton candy scented head of off-white foam. The taste, really, really fine. It delivers yellow plum, malt, toffee and a delicate spiciness. It continues with a slight bitterness, a nice full mouthfeel. The 8% abv is completely in the background. If not the best dubbel to me it is close. I get its appeal.
