The first result of the meeting with Jessica Heidrich is a healthy lager with a pure flavor of Swedish juniper berries that are matched by the exhilarating Cascade hops. According to Mathias fits the beer as good straight from the bottle in the wood-fired sauna in an elegant drinking glasses to the Swedish delicacies as caviar, trout, lobster and tartar on the game.

Bottle at Mathias Dahlgren Matbaren. Very clean spices in the nose--a gentle, mild juniper (is Swedish juniper different?), cucumber, white pepper, radishes, citrus, and aloe. Nice and bright, and I don’t really like juniper that much. Mouth is very light, not as fresh as the nose, but still nice. Very easy drinking, balanced, was worried because juniper can be so overwhelming, but this is done very well. Finish has some mild off dishsoap notes, but doesn’t linger. Overall, very clean. Excellent with the cucumber, squid, and ginger dish.

bottle at Malbaren, Stockholm, best by 2013-1-15 extremely lively juniper, ginger, lemon juice and dried flower petals in the nose. fresh cut ginger is popping from beginning to end, and the soft, velvety texture combined with the spice and prickliness of juniper gives it striking vibrance. light, pillowy carbonation with a dry body. lingering flavors of ginger, lemon (growing more pronounced with time) and juniper with quaffable acid and spledid balance, it’s expertly made, exceptionally clean and all around delicious.

330ml bottle. Pours a pale gold, with a white head. Spicy, robust aromas, earth, juniper, resin, malt, citrus, wood, hops. Dry, light to medium bodied, medium bitterness, balanced CO2. Spicy, herbal taste, malt, juniper, resin, earth, hops, spruce, slightly perfumed, ginger, mint, bay leaves. Oddly intriguing. (2012-06-08)
