COMMERCIAL DESCRIPTION
This beer has a generous head - compact and firm. Its slightly brown colour is the result of the roasted barley. It has a dark ruby brown colour and a very intense aroma. The aromatic herbs and spices used greatly enhance its delicious smell. This beer is full-bodied with a smoothness that is the result of the synergy of caramelized malts, carefully controlled fermentation and long cold storage. St Feuillien Cuvée de Noël has a very subtle bitterness that is the dominant flavour in this harmonious ale that strikes a perfect balance between all the different ingredients.

Pours a tannish garnet with a creamy off-white head, lasting a while. Aroma offers quite a bit, from caramel, molasses, brown suga, cinnemonr and yams, to pears, raisins, grapes, a slight bit of rotten fruit and alcohol. Interesting, and it keeps the lesser elements in check. Tastes of a sort of drier brown sugar and caramel malt, bread crust, raisin, honey, and a bit of that pear/grape/slightly rotten fruit flavor. Finishes pretty warming with a cinnemon drying sensation, bitter dessert bread, and a cloying sensation that’s out of place for something not overly sweet. For the moderate strength of the flavors, the carbonation is way too high and makes it seem weaker than it should. Still, this beer’s worth trying, especially for the pleasant malt flavors and aromas.

Pours brown with a reddish hue. Head was slightly off-white and creamy. Aromas of sweet malts, spices, and a small amount of yeast and cherry fruityness. Flavor is mostly malts and yeast, but there’s some sweetness there.

Bottle from Alko. Dark ruby with strong nature white head. Cherries, other red berries, a hint of tartness. Tart with hay malt, red berries. Thick, sticky, slightly sour. A nice christmassy belgian.

Bottle at hopaholic. Deep copper, almost brown colour small white head. Nose is anise and karamom. Taste is medium sweetness, strong kardamom. A little bit too much for me. Nice otherwise.

Bottle 2012: Nose is cloves, some bead, touch of mint, slight over ripe grapes. Taste is sweet and ripe, cherry, strong aniseed, some soft fruits from the yeast leading to spice and a deep alcohol warmth and candy sugar. Mouthfeel is full. This is a perfect example of a Christmas ale in taste and texture. Very nice. (Why am I drinking it in June though....)
