A collaboration of beer based off an original cocktail from our fall list. The cocktail is comprised, of 8 years Demerara Rum, Apple Brandy, Honey, Fig Preserves, lavendar, and balsamic vinegar.

Draft courtesy of Terry at Mikkel’s festival, thanks! Hazy golden orange color, small white head, delicate lacing. Arona of perfume, light spice, summer fruit. Taste is lightly spiced dark fruit. Very nice!

Pouring at the Saturday afternoon session of EBF. Pours a clear gold with a thin white head. Big cucumber on the nose, toast, wheat. Soft wheat, more cucumber. Smooth, subtle. Tastes like a cucumber. Not a lot else going on, but quite nice. Then again, I quite like cucumber.

Tap at Farmer’s Cabinet. Pours a hazed orange to rose with a medium, white head. Nose is honey, floral and fruity esters with big herbal adjuncts like Southampton Cuvee de Fleurs. Taste is big herbal adjuncts, soothing herbal honey tea. Chamomile, rose hops, rosemary, and lavender explosion. Orange sorbet palate. Fig preserves are subtle. Very nice.

On tap at Farmers. Pours a hazy golden color w/ great lacing. Scents of fresh saison, lemon, rum, honey, figs, flowery lavender. Taste is a sweet and refreshing saison, little bit of apple, cinnamon, brandy. I have been off saisons for awhile but this was very good.

On tap at CBC, Copenhagen. Clear gold beer, little white head. Light crisp palate. Nice citrus with obvious and well integrated lavender. Finishes crisp and dry with more of the same. Alcohol well hidden. Really nice easy drinking beer.

Draught at Farmer’s Cabinet: Aroma of lavender, sage, light brett, and tea. Poured amber in color with a medium-sized, creamy, dense, white head that greatly diminished but lasted throughout as a film on top of the beer. Hazy. Lightly sparkling. Good lacing. Flavor is medium sweet. Tastes of Brett, Sprite, lavender, and a hint of honey. Light to medium body. Average texture. Average carbonation. Brett, sprite, lavender finish is slightly dry.

Draught at CBC 2012. Clear orange coloured with a small white head. Fruity aroma of hops and pine needles with notes of citrus. Fruity flavour of hops and citrus with notes of pine needles. Dry hoppy finish.

Draft at CBC ´12..... It pours hazy deep golden with a medium white head..... The aroma is sweet fruits, flowers and yeast..... The flavor is caramel, flowers, spicy and yeast.....

Draft at The Farmers’ Cabinet in Philadelphia, PA. Pours a cloudy golden orange color with a two finger frothy white head that slowly settles into a pillowy cap.  Chunks of soapy lacing left behind. Sweet, slightly musty floral aroma with some funky yeast, zesty spice and sweet light fruit notes.  Pepper, coriander and ginger along with wheat, bready yeast, apple and pear.  Possible some faint honey in the nose as well. On the fuller end of medium bodied with an interesting combination of funky yeast, sweet fruit, zesty spice and herbal/floral notes.  Hints of ginger and pepper along with subtle earthy hops and funky yeast.  Kind of like a sweet, spicy saison with a  strong floral/herbal flavor in the finish.  Kind of an odd lingering medicinal presence but blends well with the other flavors.  A bit boozy as well with some apple brandy flavor coming out as it warms.  This beer is based off of a cocktail recipe and they were successful in making it taste like one.
