Clean smooth and sweet. High alcohol content but not high alcohol taste. Very sweet but an excellent saison.
UPDATED: MAY 7, 2016 Notes from a sample glass at the brewery in Huntsville. Clear still copper with a short white head. Aroma is cracked pepper, banana esters, candy-like strawberry fruitiness. Medium+ bodied, sweet with moderate bitterness and bright effervescence. Malt is lightly toasty / cracker-like, caramel-forward if anything, but overall subdued. The nose is your basic high fermentation temperature Saison yeast phenolics and fruity American hops, without fault or flaw but also without depth. Tap. Pours crystal clear orange amber, small off white head, dissipates slowly, nice lacing. Aroma is herbal, orange, pepper, light mint. Draft at the brewery. Pours clear amber with a fizzy white head. Tastes like dry herbs, light nuttyness, grassy, light alcohol, lemon. Dry feel. Light body and low/medium carbonation. Sampled at 2013 Knoxville Brewer’s Jam. Cloud orange, big white head. Bready, toasty aroma, then some light spicy notes. Nicely crisp palate. Flavor is mildly spicy, the a good deal of fruity yeast flavors. Not bad...

Nice and tart with a nice sweetness and cereal notes. Has a bit of citrus acidity to it and kind if tastes like shock tarts.

Draft. Pours medium amber with a medium-sized off-white head. Aroma is very sweet, some fruity esters, mild hop bitterness. A candy, mouth-puckering sweetness dominates the flavor. Some fruity esters squeak through. Not enough yeastiness to qualify as a saison in my book. Too one note with the sweetness. Fairly boozy. Thick mouthfeel. On tap at the Nook. Pours pale gold with a thin, white head. The aroma is hay, cereals, resin, and pine sap. The flavor is candy sweetness and a significant hop bitterness. The palate is medium to heavy, sticky, chewy, and a little acidic. Overall, this is a fair pale ale, but lacks the complexity and the yeast profile of a good saison. Draft at brewpub. Pours brown with a quarter inch of white foam. Massive rum notes on the nose. If you were to blindfold someone and have them sniff this beer, they would swear it was rum. There’s a lot of rum on the tongue as well. I do miss the farmhouse. Finishes clean. Interesting experiment. I’m not sure if it comes off.
