Urbain Coutteau of De Struise Brouwers brewed his Struise Witte on the Cabinet system with half and half Struise house yeast and Cabinet house yeast.

Tap, FC. Pours a clear gold body with a small fizzy white head that retained as a thin covering throughout. The nose is spritzy and light, little to no spicing, light wheat, and some minimal yeast influence. This one’s pretty flat on the flavor, kinda weak and watery with just a light wheat laced finish and minimal yeast. The body is light with soft fizzy carbonation, weak and thin on the finish. This one was a miss for me, leave out the spicing and it’s not a Wit anymore. Boring.

Draft at The Farmers’ Cabinet. Pours a pale golden yellow color with a two finger frothy white head that slowly settles into lasting cap/ring. Streaks of lace left behind. Slightly spicy aroma with hints of bready yeast, light fruit, banana and citrus.  Some pepper and coriander along with wheat, bread, banana and lemon peel. Medium bodied but fuller then expected with a nice balance of zesty spice, bready yeast, banana and citrus fruit.  Really clean and well balanced with zesty pepper and coriander countered by bread, banana and faint orange peel.  Not overly complex but well balanced, flavorful and deceptively drinkable.

Draft Hazy golden color, small but thick white. Very subtle aroma of feet. Taste is slightly sour lemon bubblegum. Hi carbonation.

PhillyCraft (8192) - Philadelphia, Pennsylvania, USA - JUN 6, 2012
On tap, pours light cloudy yellow. Tiny head and lacing. Aromas smelled rotten and wet funked out. Taste was piss bath water and nothingness. This was easily the most brutal of the four collab brews.

Pale to golden straw yellow. Moderate sized white head. Minimal lacing. First whiff of this beer is straight freshly manured pasture. Grassy and herbal hops follow. Not terribly pleasant (unlike what you might find in a lambic). Flavor loses the unpleasantries but is otherwise drab and simple. Light to medium bodied. Assertive carbonation. Zesty, yeasty finish. After some initial off notes, the beer settles in a bit, but doesn’t offer much.

Draft at farmers cabinet with Vinny during PBW. Pours a bright clear golden yellow. Aroma is pee, grassy hops, and honey. Mouthfeel is aggressive with a strong bitter presence, biting booze, sharp prickly grass hops, and piss.

Tap at Cabinet Artisanal. Pours clear straw. Rocky, pillowy white foam. Excellent sticky lace. Nose is beautiful Cabinet house yeast: zesty, doughy, fresh. Taste is doughy, grassy hoppy. Palate is rich, velvety, fluffy. Rich flowers and lemon abound in the aroma. Palate is gorgeous- like pineapple sorbet. Delicious.
