Nose has peat, wax, oil, wood smoke, hint of yeast. There is also a broad fume-like hit of aged cheese in the background as a basenote.
Mouthfeel is watered honey. Palate has dark fruit, honeyed dates and honey. Dry woody flavor. Woodsmoke. Peat and plasticine with some oily flavors.
Finish is dry with a woody bitter flavor.
Bottle (2013). Hazy brown beer with average beige head. Aroma of dried dark fruits, raisins, apples, caramel, red wine, light vanilla and wood. Taste is medium to heavy sweet and light bitter, very light tart, of dried dark fruits, raisins, apples, plums, dates, caramel, light spice, with notes of wine, vanilla, wood, alcohol. In 1952, in order to place the modernisation of the brewery on the right commercial footing, much care was taken with the launch of Rochefort's two new beers. The refectory beer, had been the basis for the development of the ‘Middel’ (also known as ‘Merveille’) which became the Rochefort 6. Furthermore, two malts were used in the brewing process: pils and caramel malt, as well as wheat starch, two varieties of hops and Rochefort’s own yeast. The result was the powerful Rochefort 10, a beer sure to warm your heart with its robust dose of alcohol.
Whisky lovers will no doubt appreciate its warming glow. This red-brown beer has aromas of roast wheat, fruit (figs, cherries), nuts and dark chocolate. In the mouth you will get a prominent taste of caramel, chocolate, ripe fruits and herbal touches of hops. All of these linger until the finish. Connoisseurs compare this beer with wine, whisky and port.
Mild, rich, intense, lots of body. It is both food and drink at the same time, as wrote the late beer guru Michael Jackson. This nutritional overload is far from a coincidence. The Rochefort monks used to follow a strict diet where fish, meat and cheese were not on the menu. It took a beer like the Rochefort 10 to supplement their restricted diet.

Gustul e excelent, foarte plăcut și, în același timp, foarte ușor, dulceață plăcută de zahăr brun ars, fructe negre și puțină caramelă, mult malț, ceva alcool, dar foarte puțin, pierdut undeva prin dulcață, ceva arsură în postgust.
(612 napja palackozták) Sötétbarna szín közepes, tartós, világosbarna hab. Karamelles, aszalt gyümölcsös, csokis, pörkölt malátás illat. Karamelles, aszalt gyümölcsös, csokis, kakaós ízvilág, pörkölt malátás alapon, határozott, barikolt vörösboros aromákkal. Hajszálnyit füstös, testes, közepesen szénsavas, közepesen keserű, amit főként a pörkölés ad. Érezni a korát, az ízek tökéletesen egymásba simulnak. Nagyon finom, tökéletes arányokkal rendelkezik. Igazi kortyolgatós sör.

Very complex aroma and taste. Aroma distinctly smokey, lightly sour, vague fruityness, alcohol. Taste light vanilla, red wine indeed, sweet malts, red fruits, alcohol,... too complex to notice it all in a way... Some tannines, especially in the aftertaste. Aftertaste very pleasant and lingering: nostalgic. Alcohol too dominant though and maybe the smokeyness as well. As the beer warms ( or maybe I learned to drink it slower... ) the alcohol becomes softer and the vinous character stronger. Mouthfeel: creamy but also a ( borderline burning ) dry and sandy alcohol feel on the tongue. Great Quad.Not as heavy of a Cask influence as other De Struise Beers.
This is also surprisingly bready on the Finish for a Belgian Quad.

Piwo stalo sie lekko kwaskowe i bardziej wytrawne z duzo iloscia nut beczki, wanilii i orzechow. Srednie wysycenie i goryczka na dosc niskim poziomie. Bardzo zlozone ciekawe w odbiorze. 33cl Bottle, thanks Henkie! Deep brown colour, creamy light-beige head. Aroma of dark fruits, malts, sweet red wine, oak, caramel, chocolate. Flavour is sweet, dark fruits, quite malty, light vinous, oak, some alcohol, caramel, some chocolate, very rich, soft bitter finish. Full bodied, creamy. Good stuff.
