Ingredients: Barley malt, hops, cane sugar, yeast and spices. Aged in oak barrels
225 litres (four barrels) of Tsjeeses were aged on oak for 6 months.

Poured into a LA snifter. Lot C with an 8 and a 10 highlighted, whatever that means. 4.0 A: Deeply hazed orange plum color. Three fingers of beige, frothy head. Retention is very good and a good bit of lacing is left. 4.0 S: Plenty of spices in this. Cinnamon, nutmeg, and a touch of clove. Light pepper from the yeast. Currants, plums, figs, raisins, and dates. Lightly bready malts with a moderate sweetness. 4.0 T: Tastes like the nose. All the spices mentioned. All the fruits mentioned. The two components work well together. Lightly bready, sweet, with a mild bitterness. 4.0 M: Lighter medium body. Good moderate carbonation. Bottle from Etre Gourmet. Somewhat hazy amber/copper beer with a small lasting offwhite head. Fruity yeasty aroma, hay, bread, spices, bourbon, vanilla, caramel, floral notes, earthy notes. Yeasty spicy flavor, hay, bread, bourbon, banana, earthy, some warming alcohol, caramel, barnyard, some alcohol. Bourbon finish, peat, grass, yeasty, spicy, earthy notes, a bit harsh.

Draught at Belgobaren, Stockholm. Hazy orange/grey color with a nice beige head. Malty aroma, bready, woody notesm fruity, grapes, yeasty notes, spices and some alcohol. Bready, yeasty, spicy flavor, coriander. Woody notes. Bready yeasty finish with hoppy notes. Very well balanced, not extreme in anyway. Just a really good beer.

Currently drinking while typing. We start with a rich aroma of sweet fruity maltiness, almost smells like peaches and pineapple, no hints of alcohol on the nose really just sweetness and a light wood note. Pours a coppery amber colour with a bubbly off-white head which didnt last too long. The taste is maybe a bit too sweet for a tripel, sweet Danish bread and malts are prominent and combine well with a gentle hint of oak. Slight resinous hops in the back of a pleasant aftertaste. Nice medium/full body, the texture is slightly slick with a soft carbonation. Very nice brew overall, just a bit too sweet for me I think though the alcohol is well masked.

Side by side with regular Tsjeeses. The beer appears a hazy and murky copper hue with a thin cap. The aroma offers Belgian yeast, bread, booze, malt, caramels. Smells nice. The aroma and flavor are distinctly Belgian in nature. A graceful flavor and feel on the palate. Soft and elegant with just a gentle wrming alcohol finish. Lingering notes of caramels and yeasty bread. Fairly light in body with moderately low carbonation. Another solid beer from De Struise.

A reddish brown beer with a weak and beige head. Aroma of fruits, dried fruits, lots of toffeeish sweetness, some yeast and spices; overally, aroma is fruitfull and sweet. Taste is also fruitfull and quite sweet, yeast, some strenght from alcohol, hint of marsmellows, drying spices that concentrates in the aftertaste. Also some dark fruits and even dry smoke can be found from the taste. Full bodied and quite slowly to drink. Quite controversial but tastefull beer, complex and fruitfull, barley wine -nuancees.

Pours hazy orange brown with a thick off white head. Nose is big citrus, some vanilla, wood, leather and fruit. The taste is sweet with bitter popping in midway through and hanging around until the finish. Pours hazy gold with small head. Nose is vanilla, grapefruit and coriander. I can smell the high alcohol content to, but its not overwhelming. This is what it would smell like in a hybrid candy and flower shop. The taste is very heavy oak flavor, bready with some pine sap. Mouthfeel is between medium and heavy. Very crisp but manages to coat the mouth leaving a long aftertaste of hops and oak. This is a great beer.

Additionally labeled XMas Ale 2011 on the side. Cloudy amber pour with a 1 finger, creamy eggshell head and some floaties. Lots of caramel, toffee and tart fruit in the aroma, fruity and tart yeast notes with a little bread dough, hints of nuts coriander and sweet bread spices. The flavor brings lots more toffee and caramel, stone fruit, spices, fallen leaves, sweet, crusty white bread, nut skins, raw turbinado sugar, dark fruit and light woody notes. Heavy mouthfeel with a creamy entry, syrupy middle and slightly more dry finish with a little slickness, dryness and warmth from the alcohol settling in. Really tasty stuff, nice warmer upper.

Pours copper color with a small head. Aroma of spices, fruits, some plums, caramel and herbs. Flavor of spices, caramel, malts, citrus fruits and wooden notes. An interesting and complex brew. Very nice.

2011 12oz bottle scooped up for 3 dollars. Would have bought more if Id known how well it held up. Unfiltered amber-brown-orange body, yeasty and thick. The oak really smooths the whole beer out, really helping it come together. This is pretty much in Barleywine territory, the spices are not dominant at all, mostly just a big, smooth malt river. Sweet and beastly, this is a solid Belgian beer all the way.
