COMMERCIAL DESCRIPTION
Bottle conditioned.
Ingredients: Barley malt, hops, cane sugar, yeast and spices.
Strong blond winterbeer with fluffy white head which has been lagered for 8 months on different stonefruits. Tsjeeses was born out of a 5 year brew experience regarding x-mas beer without being capable of finding a suitable name up to now. With the name came a face, a caricature actually, that was drawn on the day Urbain, our brew master and master brewer, drank too many Tsjeesess. Every time he drinks one, he says "Tsjeeses, what a beer". Therefore the name is more an expression of stupefaction than a curse. We have had already many discussions around the pronounciation of "Tsjeeses". Very close would be that you say "cheeses" or cheese in plural.

Pours a hazy medium yellow. Aroma is lightly malty, hoppy, yeasty. Flavor is moderately sweet, highly alcoholic, citrus.

Cuve 2015. Magnifique robe rousse, fin col de mousse blanche. Nez complexe de candi, fruits murs (prune, raisin, fraise, pomme). Bouche sur la pomme, fraise, herbe, lger ct poivr, pices. Lalcool est bien chaleureux, maertume moyene, corps liquoreux, lgre astringence. Trs bonne bire, bien quun peu lassante sur la fin du verre...

On tap at Struise Brouwers @ The Old School pours out amber copper color topped with a small sand head. Nose is very nice pit fruit raisins light roast caramel toffee sweetness. Taste is more of the nice pit fruit rich malts and a nice sweet and booze heat combo.

330ml bottle 2015 vintage. Pours clear red-amber with fizzy head that quickly disappears and steady streams of cascading bubbles. Fairly sweet aromas of toffee, plums, raisins, herbs and spices, some alcohol. The taste has an initial toffee and toasty maltiness, some stone fruit fruitiness, earthy yeast character, then it really dries out nicely and finishes with a firm spicy and herbal hop bitterness. Noticeable but not overwhelming booziness and alcohol sweetness. Medium bodied, prickly carbonation, doesnt drink as big as expected for a 10% ABV beer, but a good thing. Really good and, for me, much better than the barrel aged versions which come across somewhat muddy.

33cl-fles van bij Tabac&Co - Palais des bires te Dottenijs (in Famiflora). U: Licht amber-koper met een gebroken witte schuimkraag. G: Karamel, licht kruidig en veel gedroogd en overrijp fruit. S: Karamelzoet met een zeer lage bitterheid. Toffees, opnieuw veel gedroogd fruit en wat kruidigheid. Veel alcoholwarmte. M: Volmondig met medium carbonatie.

UPDATED: FEB 15, 2017 Bottle 2015 Xmas version. Pours hazy, dark amber. Smells of sweet caramels, raisins, overdone fruit, funkness. Tastes like heaven. Sweet caramels, toffe, sweet bread, riped fruit. Low carbonation with punch. Mellow bitterness. Extremely well done. Favourite. Highly, highly recommended. Excellent.

Flaska frn Beergium. Vintage 2015, drygt ett och ett halvt r gammal. Skummar nr jag ppnar. Brunmurken vtska som lgger sig och blir mer mrkorange med ett orange-beiget skum. Doften drar nstan t barley wine-hllet med st, lite kryddigt ton med mngder av torkad frukt, apelsin, rivet apelsinskal, ntiga toner, kandisocker, brdsirap, rg, knck. Mellanstor kropp som svller i munnen. Smak av malt, apelsinkola, brdsirap, brnt socker, ntig. Fin, lite brnd ton i avslutningen. Gott!

Diferente cerveza con sabores totalmente nuevos, madera y caramelo, poco lpulo. Duradera en boca. Quizs se nota demasiado el alcohol por poner un punto negativo. Espuma persistente. Algo cara, pero repetira.

330mL bottle from International Beer Collector. 2015 vintage Pours a slightly hazy dark copper body with a ring of off-white foam. Not a great deal on the nose - raisins, toffee, bready/cakey sort of malt with an nondescript spiciness. Doesnt feel nearly as potent as it is! Rather dry (well attenuated!?), sort of boozy but not rich like many Xmas (and Belgian) ales tend to be. Once again, dry overall impression - has a sort of sherry-like character about it - not in an overtly oxidised way, more a dried fruity, savoury spice way, with some brown caramel & doughy yeast undertones. Really not what I was expecting - not disappointed, but was kind of bracing myself for a big thick "liquid Christmas cake" sort of affair!

Robe ambre cuivre presque rouge fonc. Colonnes de petites bulles. Col de mousse moyen, blanc lgrement cass, compact. Rtention moyenne. Nez dabord amer qui rvlent ensuite une palette de fruits. Sucre prsent sans excs. Chaleur de lalcool prsente. Petite amertume lattaque qui se dissipe cependant que les fruits poussent la note. La vraie macration sur fruit donne une bouche gourmande, sans tre domin par le sucre. Prune, pche, pomme, poire... Aucun excs non plus sur les pices. Lger poivr, girofle ? Supposition ici car cest bien intgr. Malt bien prsent, gourmand. Fin de bouche de retour sur lamertume et petite sensation alcooleuse. Bire ronde et corpulente sans excs (courant pour le style). Bire de nol loin des clichs o les fruits ont un rle central. Bien quilibr.
