To celebrate his upcoming nuptials, Summit brewer Sam Doniach created Honeymoon SaisonBatch 07 in the Summit Unchained Series. Its inspired by French saison styles which were traditional farmhouse ales brewed to quench workers on long, hot days. Sams creation has a refreshing citrus and floral character with hints of apple, pear and spicy, peppery notes. Its brewed with a touch of Minnesota honey as a kettle addition and unfiltered for a smooth, clean finish.

Gold color with a large head. Yeasty aroma, plenty of spice and bread. Very light lemon. Light wheat flavor and more spicy yeast. Very light and dry honey, but could just be the label as I dont think I would have noticed it otherwise. Seemed to turn metallic towards the finish.

Pours a hazy golden color with a small tight white head that leaves good lace on the glass. The aroma is floral and lightly lemony with some earthy and mineral notes. The brilliance of the aroma fades a bit as the beer warms. The flavor is doughy and very spicy with lots of mineral character. The beer is bitter and lightly astringent. There are some earthy hoppy notes throughout & the beer is lightly lemony and moderately dry. Much like the aroma the more brilliant flavors in this beer become muted as it warms making it taste a little dull and watery before Ive finished the bottle, Its a weird reaction to temperature change, and not something Im used to at all with Saison. Although the harsh bitterness fades as well as it warms so thats a positive. Its a good beer.

Draft at Sweeneys, St. Paul. Light brown color and a tall, thick white head. Big aromasa of clove and yeast. Flavor is herbal with more yeast, prairie grass, cloves, and light spice. Medium sweet. Good.

UPDATED: AUG 14, 2011 Pours a honey gold color with quick diminishing white head. Aroma is fruity & yeasty. Taste is quite complex and seems a little messy...I detect apple, honey, rye, clove and vanilla bean. You can also taste alcohol, whiskey and some astingentness. The honey lends a dry palate. It was a valid attempt; not great but its not terrible. Re-Rate: This is growing on me, its a beer that Id buy again.

Picked up single 12-oz bottle from Heritage Liquors in Maplewood, MN. Pours a clear golden pale colored brew with a fast dissolving off-white head that leaves behind a film top and white ring. Aroma of golden grain malt, floral hops, a hint of vanilla, white pepper and apple. Taste is medium bodied, dry golden grain malt, some bitter yeast, and grassy hops. Finish is semi-dry with a saison yeast aftertaste with some spearmint, honey and grassy hop flavor, followed by a lingering white pepper flavor. A little bit multi-directional but still has a saison profile.

Guerde (1297) - Minneapolis, Minnesota, USA - AUG 3, 2011
(bottle) Pours a lightly hazy straw color with a very thin white head that does retain and leaves some scant lacing as well. Aroma is definitely full of honey, with some light funk, tart wheat, and a bit of banana. Smells passingly similar to Summits Unchained Golden Ale. Hint of lemon too and herbal. Gets medicinal with further warming. Flavor is lightly sweet initially, with some honey shining through with peaches, but the sweetness quickly shifts to a dry, grainy, and crisp wheat finish, with a good amount of hop bitterness to back it up as well. Faintly peppery. Mouthfeel is medium and carbonation is medium as well. Overall this is a middling saison that is rather messy.

UPDATED: SEP 28, 2011 Bottle. Pours a nice amber with a decent head. First sip was very hoppy, then it smoothed out a bit as I drank more. Was expecting more of a honey flavor. Okay but not great.

Tap. Yellow orange pour with a small but foamy white head. Grain and barnyard funk in the nose. Medium palate with some carbonation. Taste is grain, yeast, and some noticeable honey sweetness. There is some metallic element to the finish thats slightly off-putting.
