Summers here in North Florida are hot and humid, not exactly the conditions that most ale yeasts prefer. This is why Swamp Head chose a yeast for this beer that likes it hot! This traditional ale yeast used in the Wallonia region of Belgium produces a complex seasonal ale known as Saison. They do their best work at temperatures above 80, while typical ale yeasts prefer temperatures in the 60’s. So we figured if we have to work in a sweltering swamp environment, why not brew a seasonal ale that enjoys Florida summers too! From the initial aromas of pepper and summer fruits to the lingering finish hinted of floral hops, Saison du Swamp is a bottle-conditioned ale sealed for any season.

UPDATED: MAR 3, 2015 Bottle at RBWG 2013 Grand Tasting. Pours cloudy gold with a light, creamy white head. Some intriguing citrus in the nose. Light tangy flavor, some lime, hay. Light bodied with fine carbonation. Some pale malts to finish, lemon, straw. Not bad. Easy drinking. (February 2013, score: 3.6)

Bottle shared during the RBWG 2015 Grand Tasting. Tasty, with lots of pale bread sugars, ripe citrus, tangerine, mango, moderate brett. Medium bodied with average carbonation. Fruity on the finish with notes of peach and melon. Nice. (February 2015, score: 3.4)

Bottle at RBWG ’15 Grand Tasting @ Coppertail, thanks to whomever shared this one, 21/02/15. Hazed orange with a moderate off white covering. Nose is tangy citric peel, light funk, apricot, straw. Taste comprises peach, apricot, grass, light spice. Medium bodied, fine carbonation, semi drying close. Decent enough saison.

A: The beer pours a pale yellow color with a rather large white head. S: Not a bad nose. A bit funky with a little bit of feet and lemon grass, but otherwise some more typical aromas with lemon, pear, apple, and pepper. A touch of coriander as well as some pale bready malts. T: The flavor is slightly sweet and malty, but there is a lot of fruit to it. Apples, pears, and lemons are the most prominent, and there is a touch of pepper and ginger. A mild yeastiness as well. M: Medium bodied with a medium to high carbonation. O: Surprisingly nice. Quite light and refreshing.

Bottle thank to Nathan. Pours a clear orange with small frothy white head. The aroma is strong apricot and citrus. Medium mouth with strong orange peel and brett with light dry finish. Nice.

750 mL bottle shared by GT2 at the 5/7/11 DC Ratebeer gathering. Bottle #522. Pours a hazy lemon yellow color with a large frothy white head. Decent head retention and lacing. Aroma of nutty and tart notes, honey, strawberry and other fruit notes and a yeasty finish. The taste is apricot, peach, berries, pear, honey and a tart finish. Medium bodied. Very nice beer.

Bottle… Farewell to ibrew2or3… Cloudy straw-colored ale with a mid-sized, fizzy, white head that dissipates slowly. The bouquet is peppery, grainy and lightly fruity. Medium-bodied with a milky mouthfeel and tingly carbonation. The flavor is quite nice – tangy apricot ester and a mildly spicy phenol. Not as grainy as the aroma. Decently balanced. Cloudy yellowish pour. Fluffy white head. Yeasty, lemony, peppery aroma. Flavor is lightly spicy, lemon pepper, yeast, dust, musky. Interesting. Too bad its from hogtown. Dammit.
