Light and refreshing, yet busting with flavor. We add Florida Tupelo honey to a traditional cream ale, and just a touch of hops, to update this American classic. This is what a light beer should bee! Tupelo honey is produced from the tupelo gum tree which grows profusely along the Chipola and Apalachicola rivers of northwest Florida. Here in the river swamps, bees are placed on elevated platforms along the river’s edge or on floating barges; the bees fan out through the surrounding Tupelo-blossom-laden swamps during April and May and return with their precious treasure. This river valley is the only place in the world where Tupelo Honey is produced commercially. Tupelo Honey is considered to be the finest quality honey in the world and is the only variety certified for varietal purity. It costs a bit more, but we think you will find that it produces a crisp light beer that rivals the finest lagers in the world. GABF 2013. Pours a clear, very, very light yellow appearance with a white head. Corny, lemon, a bit grainy, herbal aroma. A bit sweet and kind of high carbonation, but not all that hard to drink. Not a style I particularly care for, but this was ok.

Draft to taster at Tomoka. Looks solid; a transparent lighter gold with white head that steadily dissipates into thin lacing. Smells of mild grain with a bit of hops and a touch of honey. Tastes like it smells with a bit more hops and honey. Average on the palate with a medium light-bodied mouthfeel. Not bad.

on tap @ Swamp Head / Gainesville FL --- Clear light golden amber, white full-bodied rim head, streaks of lace. Taste is somewhat sweet malt that adds carbonation on the swallow, turning to light hops as it enters the finish. Malt shows again at the very end. Light, but enjoyable.

On tap @ Redlight Redlight. 10 karat pour produced a small white head. Aroma and flavor are subtle and show light hops, caramel malt, and a touch of lactose. Not special.

On draft at Datz. Very light in color, slight golden brown tints with a very clear transparent center. Aroma is slightly sweet with hints of honey. Flavor is on the same lines with the aroma, slightly sweet with honey and malts. Very sessionable.

Tap at Farrah’s in Gainesville, FL. The pour is a clear, light yellow topped by a dense, off-white head. Nice retention and lace. Aroma is soft, fruity, mild adjunct and grain. Sweet melons and sugar comes through. Taste is malt heavy, biscuit, sugar, heavy butter biscuit with mild diacetyl and lemon. Bitter, nutty, sharp. Perhaps a bit too rich and too buttery. But definitely on style for cream ale (though diacetyl should be avoided but doesn’t detract too much here), which should be the ale equivalent of pale lager. Very nice- a good stepping stone beer for someone trying to move away from macro pale lager and into craft beer.

On tap at Cigar City on 4/28/11. Clear yellow pour with a medium white head. Malty and corny nose with not much else going on. Malty, corny and creamy flavor with a bit of noble hop. Pretty typical cream ale.

On draft that poured a pale golden color with aromas of cereal, corn, and a touch of floral hops. Flavors match the aroma with a touch of sweet honey in the aftertaste. Beer was crisp and an easy drinker.

Appearance: sun-soaked straw under a fluffy white head with an intriguingly almost light grassy green hue along the edges. A few random bubbles trickle to the top only to meet a solid layer of white resistance.
Nose: crisp blanched bushels of straw with fresh green grass blades. Creamy sweetness along the edges. Lemon cakes with sugar crusts. Sweet grains, sweet rolls, and a touch of raw grains. Key lime zest. Bright cereal grains.
Palate: key lime rind along the edge and in the finish. Medium-light weight. Sweet honey-coated toasted cereal grains. Key lime and lemon in the middle with a light, uplifting dry finish. Honey is a subtle touch, kissing the grains and gently infusing freshly baked breads with its essence. Sugared lemon candies up front along with lemon cake with a thin sugar glaze coating. Playful. Rind slowly grows in the back swallow.
Final Thoughts: a very tasteful take on the cream ale from yet another Florida brewery making itself known in the seemingly always behind everything sunshine state. Good stuff; perfect for a day on the beach or out on the ocean relaxing with nary a care in the world.
