Another amazing beer from Tallgrass. I want to meet the guy who mastered this chemistry of taste and intoxication. When to to the liquor store and see the tallgrass mix pack has the rooster as its featured beer, I will always pick it up. I am usually a bitter fan but the citrus. assault combined with the unapologetic high alcohol yeast in the Rooster is just enough to leave you in a wonderful state of waiting for the next Velvet Rooster.
This canned brew from a bottle shop was served at a cool temperature and poured a large sized head of foamy finely sized white colored bubbles that were long lasting and left behind a semi-transparent yellow orange colored body and a thick foamy lacing. The nice aroma was candy and malty. The mouth feel was tingly at the start and strongly tingly at the finish with a malty candy aftertaste. The nice flavor contained notes of candy. Aroma is raisins, honey, biscuits, and flowers. Rich amber color. The beer is a complex mix of biscuits, apricots, raisins, honey, flowers, citrus, and grass. Its creamy, with a thick palate for a lighter beer. Rich clean finish. Fantastic! would definitely recommend it.

12 oz. can. Pours a hazy pale gold with a white head. Aroma of Belgian yeast, coriander, spice, floral notes. Taste follows nose, with some banana, clove and white pepper. Not bad.

Can served in a glass,
this drink was a less than medium gold (color of honey) in the glass, faint orange and amber, the beer had a light haze, and the pour gave less than a finger of white and off-white cover of bubbles that receded to a ring with a few islands,
this beer had aromas of honey, malt sweetness, alcohol esters, some floral and spice, a little banana and apple with faint pear in the background, the hops were light,
the flavors were bread malt, light grain, light pear fruit with hints of alcohol, light spice, malt and sugar sweetness,
the finish had light to less than medium pepper spice,
the mouth feel was light medium to medium, there was soft to average carbonation, this drink was creamy on the lips,
and had a little warmth on the lips, more carbonation would help,
the nose was pretty sweet with fruit, spice and a bit of floral notes,
the aroma reminded me of a sweet Russian lager,
the presentation was poor,
the flavor was not as sweet as the nose, and the alcohol was not hidden that well in this drink,

12 oz. can bb 03/19/18. Mostly clear orange-amber with a lasting film of bubbles. Aroma of spicy clove, banana bread, caramel and a hints of toasted nut. Flavors of banana nut bread and clove. Finish has some wheat, apple bubblegum, resin, wine and a touch of peppery zest. Hazy burnt orange pour with a two finger creamy beige head, quickly fading. Aroma is raw yeast, stone fruit, bread, caramel, a hint of raisin, light floral and peppery notes. Flavor is raw doughy yeast up front, some caramel/toffee sweetness, red apple, stone fruit (apricotish) and some citrus zest. Medium body, slightly chalky, syrupy feel on entry, with a drier, slicker, boozy feeling finish. Good stuff, a little too boozy tasting and feeling for it’s own good, but it hits most of the right notes.
