COMMERCIAL DESCRIPTION
This rustic beer is the result of barrel aging a blend of our Anniversary, English-style old ale, with Smoking Wood, an imperial smoked rye porter. Bois Fumé, meaning "Smoking Wood" in French, is pleasantly sweet with a dry, peaty finish.

Poured from a 750 ml bottle. Aroma is very rich and malty. Lots of dark caramel, toffee, treacle, and burnt sugar. Lighter chocolate and roast notes. Light smoke notes. Light oak. Medium light bourbon notes with some alcohol spice. Pours a very dark brown, but not quite black with a small, moderately thick, dark tan head that recedes quickly to the edges where it lingers for a some time. No lacing and sheets of alcohol. Flavor is very sweet with lots of malt character. Tons of dark caramel, toffee and treacle. Moderate chocolate and burnt sugar notes with lighter roast notes, and smokiness. Light tobacco notes. Medium light oak notes with moderate bourbon flavors. Fairly hot with a lot of alcohol spice. Lingering caramel, roast bourbon, and alcohol spice in the finish. Moderate bitterness. Mouthfeel is full bodied with medium carbonation. Low astringency and medium high to high alcohol warmth. Overall, better than I was expecting. The smoke character is rather light and well integrated with the malt profile. Nice sweetness that helps a bit to hide the alcohol. Tough to drink a whole bottle by yourself though.

750ml bottle thanks to Darrel. Pours out a cola brown color topped with a small head. Nose is sweetness chocolate syrup barrel goodness and some smoke. Taste is more of the smoke a nice sweet malt and barrel.

Pours dark brown with a small tan head that quickly fades leaving behind a small ring, no cap and little to no lacing. AROMA: loads of smoke, charred oak barrel, dark roasted malt, barley sugar, mellow spices, molasses, caramel, toffee, faint licorice, earthy, bourbon notes, cinnamon, herbs, burned brown sugar, dry dark bitter stone fruit, dark bitter chocolate, roasty, dry tobacco and hop bitterness. TASTE: charred oak barrel, dark roasted malt, overly sweet, barley sugar, mellow spices, molasses, caramel, toffee, faint licorice, earthy, bourbon booziness, cinnamon, herbs, burned brown sugar, dry dark bitter stone fruit, dark bitter chocolate, roasty and light hop spice. AFTER TASTE: charred oak barrel, smoke, dark malt, barley sugar, spices and molasses with a boozy SWEET and bitter thick oily mouth coating finish.

UPDATED: JAN 1, 2016 750 ml bottle (2014) poured into a Bruery tulip. Dark brownish black with a finger of light tan head. Aromas of dark fruit, caramel, bourbon, light smoke, a little oak. Tastes of dark fruit, smoke, caramel, bourbon, subtle peat, dark chocolate. Medium-full body with a dry finish. Alcohol is super well masked. Happy New Year!

Bottle shared at the chriso Easter 2015 tasting - London. Many thanks to T-Bois for this 16%er. Pours oily black with a light tan foam head. Great nose, lots of peat, maple syrup, toffee. Hugely sweet flavor - go figure! - with some burnt toffee, well ripened dark fruits, maple, faint peat. Full bodied, oily and chewy, with fine carbonation. Hot finish with notes of dark fruits, figs, mellow peat, dark bread, fruitcake. Very solid.

Big nose of brown sugar, figs, oak, and toffee. Deep caramel sweetness and dark fruits cannot hide the alcohol, but the smoke and spice compliment it very well. Very nice sipper.

Bottle. Aroma: Butterscotch, maple syrup, milk chocolate, vanilla, raisin, fig, alcohol, smoky whiskey. Smoke isn’t as pronounced as the fruit and barrel notes. Flavor: smokier. Alcohol is big, with more smoky whiskey notes. Dark chocolate, vanilla bean, tons of charred oak. Booze and smoke get in the way of the underlying flavors a bit. Overall: A man’s beer. Nice for sipping in a study, while wearing spectacles and perusing a volume of some sort.
