The Bruery Provisions Series: Salt of the Earth

Salt of the Earth is our play on a gose. Not to be confused with a gueze, the gose style originated in Leipzig, Germany. It is a wheat beer traditionally brewed with salt and coriander as well as lactic bacteria. Clearly not following the Reinheitsgebot, we figured we’d knock it up a level by using an addition of truffle salt in our gose, adding an earthy and funky element to the aroma and flavor certain to tantalize all of the foodies out there.

People hate on this brew and I went into skeptical based on reviews but I enjoyed my pour. I did detect some salt but it wasn’t as if I was drinking deer lick... Nice attempt at the unorthodox style. Somewhat sour, but it has a nice clean bite at the end, I appreciate.

from bottle thanks to random nice people at Himmeriget. Pours a clear golden with a small white head. ARoma has yuzu, oily truffle (??), bell pepper, oregano, super herbal! Taste is slight sour and lacitc, grainy, saly, crisp, very low bitterness and a high carbonation. Light body.

750 ml, via trade, after bike crawl with Rich, golden yellow with big billowy foam, lots of salty nose and truffle, truffle / spoiled milk flavor was. Not my favorite . Well constructed .

At Himmeriget, Copenhagen. Light hazy yellow color with off white head. Malty and yeasty aroma, caramel, bready, fruity too, light spicy. Sweet, light bitter and light acidic taste like aroma. Medium oily body with soft carbonation.

From a 75 cl bottle shared at Travlr’s sour beer tasting. Pours a cloudy gold with a thick white head. Butterscotch nose. Flavors of caramel and some tart cherry with a dash of salt.

Bottle. Pours a cloudy yellow orange with thick frothy off white head that lasts leaving sticky lacing. The aroma is strong coriander and truffle salt. Medium mouthfeel with coriander and citrus with lingering salty finish. Very good gose.

Hazy yellow gold in color... Aroma of vinegar, salt, funk... Flavor is salty and thin, lagery with rotten fruit finish... Just rated my first bruery beer under 3.0... pathetic excuse for a gose.
